Who else is obsessed with peanut butter cookies? I know I am. This time I went a step further and amped these bad boys up by adding chocolate chips in the peanut butter cookie dough as well as topping them with chocolate frosting.
Not only are they not as sweet as you might think, ( balance my friends! It’s called balance!) but they are also small bite sized little treats that you can enjoy without feeling like you just ate one giant cookie that contains like 400 calories!
The thing with this peanut butter cookie cup recipe is that I was looking for something similar all over the internet but I couldn’t find anything. All the recipes that I found consisted of a peanut butter cookie in a cup but that’s also stuffed with a Reese’s candy. Don’t get me wrong, those are all the way up my alley but I just wasn’t looking for that at the time.
So I took it upon myself to develop:
Our newest favorite peanut butter cookie cup recipe with chocolate chips and chocolate frosting.
Yea… I kinda went all out with the title too because this cookie has too many awesome things that I needed to include.
Peanut butter, check.
Mini chocolate chips, check.
Chocolate frosting, check.
In a cup shape, check, check , and check!
I don’t know if you can tell but I am way too excited for these, but I guess that means they’re good, right? I wish I could jump off the screen and hand you some because if you haven’t make them yet, you’re missing out!
Wha’t so special about today’s peanut butter cookie cups
There’s something oh so special about cookies in a cup shape. That’s why I wanted to make these cuties, other reasons why you need to try these for yourself are:
- They are in a cute cup shape, top them with frosting they look like little cupcake cookies! Seriously the best.
- These peanut butter cookies come in tiny, bite sized little bundles of joy. Meaning you can have one and save the rest for tomorrow, totally guilt free!
- When making the recipe, I tweaked it to make sure that the sugar levels are not too overpowering. Especially since it has chocolate chips as well as chocolate frosting. So I reduced the sugar in the cookie and let the other ingredients balance it all out for us. Don’t worry if you decide to have these without frosting they’ll still be amazing.
- Make these as a holiday cookie box filler and watch everyone’s face light up when they taste them this year!
- Lastly, these chocolate chip peanut butter cookies are rich, packed with peanut butter flavors and have the best cookie texture ever.
Ingredients to make peanut butter cookie cups
- Peanut butter- For this recipe I use regular skippy peanut butter.
- Butter– Softened butter it is.
- Sugar– Regular granulated sugar will do the trick.
- Brown sugar– As well as some brown sugar to get that molasses flavor and keep your cookies soft and chewy.
- Egg yolk– You will need one large egg yolk for this recipe because it is high in fat and will help keep our peanut butter cookies nice and moist.
- Vanilla– I always add vanilla to most my baked goods, it always adds an extra oomf.
- Flour– All purpose flour works great for this recipe.
- Baking soda– This will give these yummy peanut butter cookie cups a gentle lift.
- Salt– You will need a pinch of salt to balance out the sweetness of these cookies.
- Mini semi sweet chocolate chips– I always love adding chocolate chips to my peanut butter cookies because it brings a nice little surprise when you bite into your cookie cups. If you don’t have these or don’t mind for mini chocolate chips, you can definitely omit.
- Chocolate frosting– This too is optional. You can either make your own chocolate ganache by following the simple step to make whipped chocolate ganache here. All you gotta do. is swap out semi sweet chocolate chips for the white chocolate chips used in that recipe.
