  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 1/2 cup AP flour
  • 1 tsp salt
  • 3/4 cup Christmas m&m's regular or mini, extra for topping (optional)
  • 1/2 cup chocolate chips optional

Instructions

  • Preheat the oven to 350F then line an 8×8 inch baking pan with parchment paper.
  • Mix the butter and brown sugar together on medium speed until combined.
1/2 cup butter, 1 cup brown sugar
  • Add the egg, the egg yolk, and the vanilla extract and whip for at least 3 minutes. This process will create a beautiful crinkly top.
1 large egg, 1 egg yolk, 2 tsp vanilla extract
  • Mix in the flour and salt just until the flour disappears. You don't want to over-mix the brown butter blondie mix. Fold in the chocolate chips and the M&m's.
1 1/2 cup AP flour, 1 tsp salt
  • Spread the blondie mixture in the prepared 8X8 inch baking pan, and bake for 17 minutes.
  • Once baked, pull out the blondies from the oven and allow them to cool down fully before slicing into them. I let them cool for an hour or two depending on my kitchen's temperature. They should be at room temperature. This will allow the bars to be fully set. Slice into 16 equal squares and enjoy.

Yummy but definitely were so gooey you couldnโ€™t even pick up a piece even after a couple hours and some might think raw. (Iโ€™d like to hope a single egg would be cooked by then lol) Turned out better after a while in the fridge!

The flavor of these was really great, but unfortunately they would not cook right. I baked them for the original time said and they were raw in the middle. I kept cooking them for more and more time until I reached a total of around 35 minutes, and they were still raw in the middle. I even tried another batch and had the same result. It wasnโ€™t my oven because I made cookies that turned out fine the same day.

I made these a cooked them for 17 min as directed, then noticed they didnโ€™t look fully cooked so I kept them in for an extra 2 min. They still didnโ€™t look great, but I pulled them out and half an hour later they oozed out of the pan. Iโ€™m not sure what went wrong, but I wish the recipe would indicate how to know itโ€™s ready to pull out of the oven, since different ovens work differently and 17 minutes might not be the same across the board.

Thank you so much for trying the recipe and for your feedback! Youโ€™re absolutely right that oven times can vary quite a bit, so visual cues are super important with blondies. A good sign theyโ€™re ready is when the edges look set and lightly golden, while the center still looks a little soft (theyโ€™ll finish setting as they cool). You can also do the toothpick test: it should come out with a few moist crumbs, but not raw batter. Hope this helps for next time ๐Ÿ™‚
