After getting over 50 requests for these Starbucks lime frosted coconut bars, the decision was made for me. I drove to Starbucks and got the OG lime bars to try out and see if I can recreate them.
They were super tasty, soft coconut bars, with a lime green lime frosting. I thought that the frosted needed to be a tiny bit more tang so we made that happen.

- Butter– Use softened butter for this recipe, salted or unsalted works great.
- Brown sugar– Brown sugar is used in the cookie bar to give it that soft texture.
- Egg– Use a room-temperature egg.
- Vanilla extract– The vanilla extract will give extra depth to our bars.
- Coconut extract– We will also use some coconut extract to add in some more coconut flavor to our bars.
- Flour– AP flour works great in this recipe.
- Baking powder– The baking powder will add extra height to our bars.
- Salt– Always use a little salt in your sweet treats to balance out all the flavors.
- Shredded coconut– Use unsweetened untoasted shredded coconut for this.
- White chocolate– Use small good quality white chocolate or just chop up some larger white chocolate chips instead.
- Lime extract– The lime extract is used in the buttercream frosting to bring out that time flavor even more. You will also need some to drizzle on top of the bars.
- Powdered sugar– The powdered sugar will give some stability and sweeten our frosting.
- Milk– The milk is used to thin out the frosting.

- Food coloring– Use lime green food coloring or mix a tiny bit of yellow food coloring and a bit of green together.
How to make Starbucks lime frosted coconut bars?

- Cream the butter and sugar together.
- Add in the egg, vanilla extract, and coconut extract and mix.
- Fold in the dry ingredients just until the flour mixture disappears.
- Mix in the white chocolate.
- Spread into a lined 8×8 baking sheet and bake.
- Frost the cooled-down cookie bars then sprinkle some more coconut on top and drizzle with white chocolate.

You can store these in an air-tight container at room temperature (as long as your kitchen/house isn’t too hot) for up to 4 days.
I like to store mine in an air-tight container or a ziplock bag in the fridge for up to 7 days.
Can you freeze lime coconut bars?
Absolutely!
These freeze very well.
All you have to do is flash freeze them on a flat baking sheet or plate, then transfer them into an air-tight container and freeze them again for up to 3 months.
Make sure to separate each layer with parchment or wax paper to avoid any issues.
Once you’re ready to serve it, thaw in the fridge overnight or on the countertop for a few hours.
Do I have to use food coloring for the frosting?
The lime green-colored frosting is a fun twist to really make this recipe look like the real deal but you don’t have to use food coloring if you don’t have it or if you’re trying to stay away from food dyes.
Is lime flavoring or lime extract a must in this recipe?
The lime extract can be a bit tedious to find in stores. I purchased mine from Amazon so if you can’t find it add-in. more lime juice instead of the milk to really bring out that flavor!

- ½ cup butter
Ingredients
- ½ cup butter softened, salted or unsalted
- ⅔ cup brown sugar
- 1 egg at room temperature
- 1 teaspoon vanilla extract
- ¼ teaspoon coconut extract
- 1 & ¼ cup flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup shredded coconut extra for topping
- ⅓ cup white chocolate chips mini if possible
Lime frosting
- ½ cup butter at room temperature
- ½ teaspoon lime extract
- 1 & ½ cup powdered sugar
- 1 tablespoon heavy cream or milk
- 2 tablespoon lime juice
- food coloring
- 2 tablespoon white chocolate for drizzling, melted
Instructions
- Preheat the oven to 350F then line an 8×8 baking pan with parchment paper and set aside.
- Cream the butter and brown sugar together until creamy. Add in the egg, vanilla extract, and coconut extract, and mix to combine.
- Fold in the flour, baking powder, salt, and shredded unsweetened coconut just until the flour mixture disappears. Fold in the chocolate chips, spread the batter onto the prepared baking sheet and bake for 15-16 minutes.
- Pull the coconut bars out of the oven and let them cool down completely.
Make the lime frosting
- In a large bowl, whip the softened butter, powdered sugar, milk, lime juice, and lime extract together until light and fluffy.
- Add in a little lime green food coloring or mix some yellow food coloring and some green to create that perfect Starbucks coconut lime bar frosting color and stir.
- Frost the cooled-down coconut bars, and drizzle with melted white chocolate, you can use a piping bag for this, a ziplock bag, or even a spoon if you don't mind thicker streaks. Sprinkle with more coconut, slice, and enjoy!
- If you prefer these chilled, chill in the fridge until set and enjoy with a tall gladd of milk or your favorite Starbucks coffee!

These were so good. I couldnt find lime extract so i used lime zest instead andbinstead of white chocolate chips I used the cream cheese morsels. I also added a drop of yellow food coloring to make it more lime colored. Everyone loved them, thanks for the recipe.

Spectacular clone! Even better than the original. After trying it twice the traditional way, I tried a fun variation by replacing the lime flavors with lemon, and the white chocolate chips with macadamia nuts. It was sooo yummy! Since it’s fall, maybe I’ll try a version with pecans and chocolate chips in the shortbread and a chocolate icing… possibilities are endless!
