- 1 stick butter softened unsalted (½ cup or 8 tbsp)
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg at room temperature
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon lemon extract
- 1 & ¾ cup all purpose flour (225g)
- ¾ teaspoon baking soda
- ¼ teaspoon salt

- 2 tablespoon butter
- 1 tablespoon + ¼ cup powdered sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- extra lemon slices for decorating
Instructions
- Preheat the oven to 350F then line a baking sheet with aprchement paper and set aside.
- Cream the butter, granulated sugar, and brown sugar together until light and fluffy. Add in the egg, lemon juice, lemon zest, and lemon extract and mix until combined.
- Gently mix in the flour, baking soda, and salt until the flour mixture disappears. don't overmix so that your cookies stay soft and chewy.
- Scoop out 8 equally sized cookie dough balls then place them on a plate or baking sheet and freeze for 15 minutes.

These looked soo good we just had to give them a try because we love everything lemon. Most of our family is gluten free and sometimes recipes can be a little iffy. We used great value all purpose gluten free flour and they turned out AMAZING. Do not hesitate to try these. Only tip I have is they seemed to take a bit longer to back than the recommended time. I did make mine a bit smaller to get 12 cookies and they took abt 15 minutes. I’m so glad I found this recipe!!

Really easy and beautiful cookies ! I did this recipe in grams (i am french) and didn’t put as much sugar as the recipe said (only 200g white sugar and 80g brown sugar). We tried making these tonight and ended up needing to cook them for 24 mins (for the large 8 cookies) vs. 10-11mins. Not sure if our oven was just having a bad day or if anyone else also needed more time.

Do you have alternate directions to make the Lemon Glaze cookies smaller? Would like to make these for a cookie exchange but just 8 cookies (I know they are giant) per batch would mean a lot of batches.

Instead of making 8 cookies you can make 16 per batch and bake them for 8-9 minutes instead. The baking type will depend on your oven so I would suggest baking one or two cookies as a trial batch to nail the baking time then bake the rest.

These cookies were chewy and delicious! I made 16 cookies instead of 8 so I had to try and figure out the bake time. I think the recipe instructions should also state “cookies are done when the edges turn brown.” I didn’t now when they were done and when they cooled they were still doughy in the middle. What do you mean by “swish” the cookie “around” after taking it out of the oven? Thanks

What I mean by that is take a cookie-cutter that’s a bit larger than your cookies ( you can also use a mug that’s larger that the cookies) Place it around the cookie as soon as it comes out of the oven, then move the cookie cutter around in circular motions to reshape the cookie and make it perfectly round. This will also help the cookie stay thicker.
