- Preheat the oven and line a large baking sheet with parchment paper or silicone mats and set aside.
- Pull out either a bowl of a stand mixer or a large bowl and a hand mixer. Cream together the room temperature butter, granulated sugar and brown sugar using a paddle attachment until light in color and fluffy. Add in the egg white and the vanilla and mix again for 30 seconds or until fully incorporated.
- Add in the dry ingredients: flour, baking soda, baking powder, and salt, and mix just until the flour disappears. Using a small cookie scooper, scoop out equally sized sugar cookie dough balls onto the prepared baking sheet.
