These small-batch cosmic brownies are a dupe for the little Debbie cosmic brownies but even better. You get super fudgy brownies topped with a delicious and simple ganache and the cutest rainbow sprinkles on top. There is something about a chocolate overload dessert that just hits the spot. Now these little Debbie brownie copycats are the treat that will have you jumping back to all those elementary school memories but with a tastier cosmic brownie recipe that is more fit for your adult pallet. 

These chewy brownies are made with high-quality ingredients and can be topped with dark chocolate ganache to really elevate them. Don’t worry semi-sweet chocolate will also be just as good!

  • Butter- You can use salted or unsalted butter for this recipe. 
  • Oil- The vegetable oil will help give these brownies an extra chewy texture. 
  • Granulated sugar & brown sugar- We are using a combination of sugars to really elevate both the flavors as well as the texture. 
  • Egg- Make sure it is at room temperature. 
  • Vanilla extract- This will help deepen the flavor of our brownies even more. 
  • Salt- Always add a little salt to your baked goods to help balance out the sweetness of the dessert.
  • Flour – All purpose flour works great for this recipe. 
  • Cocoa powder- Make sure you are using high-quality unsweetened cocoa powder for this recipe. It will help the brownies taste even better. 
  • Semi-sweet chocolate chips– The semi-sweet chocolate chips are used to make the chocolate ganache topping so making sure to use high quality is a must here too. Feel free to also use dark chocolate instead if you prefer. 
  • Heavy cream – The heavy cream is also used to make the homemade version of the ganache that goes on top of our brownies. 
  • Mini rainbow sprinkles – I used the rainbow chips which are made with chocolate in the center but if you can’t find those feel free to use mini m&m as well! The colorful sprinkles on top are a must for this special treat because they really bring it together just like the Little Debbie’s cosmic brownie bites that you can find at your local grocery stores.

 How to make these small batch original cosmic brownies

  1. Melt the butter and oil in a large bowl or medium bowl in the microwave. 
  2. Add in the white sugar and brown sugar and mix to combine. 
  3. Mix in the egg and vanilla extract until combined.
  4. Whisk in the cocoa powder, flour, and salt just until the dry ingredients disappear.
  5. Pour the brownie batter into the prepared pan and bake in the preheated oven
  6. Allow the baked brownies to cool down fully before topping them with thick chocolate ganache frosting and the rainbow candy sprinkles. 
  7. Chill in the fridge to set before slicing and enjoying.

You can store these brownies in an airtight container in the fridge for up to 4 days. Make sure to separate each layer with wax paper so they don’t stick to each other. Enjoy these right out of the fridge.

Can I make these brownies ahead of time for a special occasion?

You definitely can! These brownies store so well that you can make them ahead and keep them in an airtight container in the fridge for when you are ready to serve them. 

I highly recommend storing them in a flat container so that they look just as good as the day you made them.

Can I freeze this small batch cosmic brownies?

Definitely! I highly recommend flash-freezing them on a flat surface to ensure that the rich ganache is set before transferring them to a freezer bag or an airtight container and freezing them for up to 3 months. Make sure to separate each layer with wax paper so they stay clean looking, and of course, thaw them on a flat surface in the fridge overnight before enjoying them whenever that chocolate craving hits!

Can I reduce the amount of sugar in the recipe without affecting the taste too much?

I would not recommend changing the measurements of this recipe since it has been tested a few times this way to really make it as best as possible. If you do change the ingredient measurements and love it, please let us know in the comments! 

Can I use a different type of oil instead of vegetable oil in this small batch cosmic brownies recipe?

Yes! You can use canola oil, coconut oil, or even olive oil for a little extra depth of flavor in this recipe.

Ingredients
 
 

  • 4 tablespoon butter
  • 1 tablespoon oil vegetable or canola
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup all purpose flour
  • ⅓ cup cocoa powder

Ganache topping

  • ⅔ cup semi-sweet chocolate chips
  • ¼ cup heavy cream
  • Rainbow chocolate sprinkles for topping

Instructions
 

  • Start by preheating the oven to 325F then line a 9×5 or an 8×5 baking pan with parchment paper then set aside.
  • In a large bowl melt the butter and the oil in the microwave or on the stove top in a medium saucepan.
    4 tablespoon butter, 1 tablespoon oil
  • If you melted the butter in a saucepan transfer to a large bowl, if not just add in the granulated sugar and the brown sugar to the butter and whisk until the mixture is fully combined.
    ⅓ cup granulated sugar, ¼ cup brown sugar
  • Add in the egg and the vanilla and whisk to combine. Whisk in the flour, cocoa powder, and salt until the flour mixture disappears. Pour the brownie batter into the prepared baking pan. Spread the brownie batter to cover the full loaf pan and bake in the preheated oven for 25 minutes.
    1 egg, 1 teaspoon vanilla extract, ¼ teaspoon salt, ¼ cup all purpose flour, ⅓ cup cocoa powder
  • You will know your brownies are ready when you insert a toothpick in the center and it comes out with just a few wet crumbs.

Make the chocolate ganache

  • In a medium bowl microwave the chocolate chips and heavy cream in 30-second increments and mix until smooth.
    ⅔ cup semi-sweet chocolate chips, ¼ cup heavy cream
  • Let the brownies cool down completely before topping them with the chocolate ganache and rainbow chocolate sprinkles. Chill in the fridge for 30-60 minutes before slicing into them and enjoy!
