I’m obsessed with Cornflakes, so indirectly, I’m obsessed with these no-bake peanut butter cornflake cookies. They have just the perfect amount of crunch without being too hard.
They also have a slight saltiness to them which makes them extremely addictive if we’re completely honest. I pretty much have handfuls of this cereal whenever it’s at the house because to me it tastes like a combination of crackers and cereal with hints of saltiness for my salt-addicted self.

Why are my no bake cornflakes marshmallow cookies not gooey?
This can depend on a few things.
If you overcook the peanut butter marshmallow mixture it will almost caramelize and harden as it cools down, so make sure to melt it low and slow.
The next issue could be that it’s just too cold where you’re at. The solution to this would be to pop them in the microwave for 5 seconds and enjoy them.

I’m going to order gluten free Corn Flakes on line since it is not available where I am. My two cousins and I are going on a road trip several hours away. We will be leaving very early in the morning (like, 5 or 6- – and I am not a morning person 😩), so I was wondering if I could make these the day before? Also, do you have other recipes using Corn Flakes, since the box they come in is pretty big and I don’t eat Corn Flakes normally. Thank you.
Why? Why isn’t the recipe at the top of the page? Nobody comes here for meandering stories about how good somethign is. They come here for the recipe.
Please put the recipe at the top, and put a “Jump to meandering story you didn’t come here for” button a the top. That way I can read your story while enjoying your recipe, instead of suffering in hanger while looking for what I came here for.
Oh, I feel the hanger in this comment! 😆 There’s a “Jump to Recipe” button right at the top, so you can skip straight to the good stuff. But here’s the thing: The extra details help people get the best results (because no one likes a failed recipe)
I subbed the cornflakes for Original Special K. These were so delicious! Literally a fluffernutter rice cripsy treat. I could eat these all day.
I’m so glad you enjoyed the treats with the Special K substitution. You’re one smart cookie!
I added Reese’s pieces and chocolate chips. This is my new favorite no bake recipe. Thank you for sharing it with us!
You’re welcome Ann!
Made a batch at for a bake sale. Kind of crumbly so I think I needed more marshmallows or pb to help bind it together better. But they tasted amazing. I used Honey Bunches of Oats with Almonds.
Thank you for making the recipe!
Thanks so much for this recipe! I had some Trader Joe’s Cookie Butter on hand that wasn’t getting used very often, so for the 3/4 cup of peanut butter in the recipe I used half peanut butter and half cookie butter. Turned out delicious!
Genius!
I tried the recipe, it’s really good.
I followed the recipe, except I used cookie butter spread. It didn’t seem that there was nearly enough melted butter/spread/marshmallows to coat all of the cornflakes and make them sticky. I doubled the amount of melted ingredients and tried mixing it with the original batch and the cornflakes still did not stick together. Is the ratio of 3/4 cup butter spread and 10 0z of marshmallows to the 7 cups of corn flakes correct? What am I doing wrong?
I bake quite a bit, but Im clearly not very good at this simple no bake dessert.
I can see where it might feel tricky! Cookie butter spread is softer than peanut butter, so it doesn’t firm up the same way when mixed with butter and marshmallows. That’s probably why your flakes didn’t stick together as well. Peanut butter adds structure while cookie butter stays looser. If you want to use cookie butter, I’d suggest reducing the cornflakes slightly (start with 6 cups instead of 7) and letting the mixture sit for a couple of minutes after stirring so it thickens before scooping. You could also add another small handful of mini marshmallows to help bind everything together. Don’t worry though, you’re not doing anything wrong, it’s just the ingredient swap changing the texture.
If I could leave a picture I would because these came out just like the picture. Super easy and quick to make. Peanut butter lovers perfect snack or meal. Whatever you desire lol. A nice twice on rice krispy treats
I love this comment Mike! Thank you so much!
Delicious! Tastes just like the Crumbl cookie!
Thank you Noelle.
Maybe it’s the type of pb I used, but it didn’t quite taste like Crumbls version. Either way it’s not bad to snack on
For the PB I used SKIPPY Creamy Peanut Butter! If you make these again maybe with this PB maybe you’ll like it better 🙂
So easy and tasty. I somehow got 17 cookies! I could eat the whole pan, they’re that good!
