I’m obsessed with Cornflakes, so indirectly, I’m obsessed with these no-bake peanut butter cornflake cookies. They have just the perfect amount of crunch without being too hard.

They also have a slight saltiness to them which makes them extremely addictive if we’re completely honest. I pretty much have handfuls of this cereal whenever it’s at the house because to me it tastes like a combination of crackers and cereal with hints of saltiness for my salt-addicted self.

Today, I decided to recreate a holiday crowd favorite, AKA the no-bake peanut butter cornflake candies or cookies. They are very similar to rice crispy treats with peanut butter but instead of using regular puffed rice, we will be using Cornflakes.

The secret ingredient to keep them extra chewy is the addition of the mini marshmallow at the end. It will help make these no-bake cookies a whole experience! Trust me!

  • Peanut butter– Smooth peanut butter will work great. Make sure to use regular peanut butter and not the natural,healthier version as it wouldn’t allow these to set.
  • Marshmallows– Mini marshmallows are best for these Cornflakes krispy treats.
  • Peanut butter chips– These will be melted and drizzled on top of our no bake cookies for a gorgeous finish.
  • Oil- The oil is used to thin out the peanut butter chips for drizzling.

  1. Melt the butter and peanut butter together in a large pot.
  2. Add in the mini marshmallow and mix.
  3. Fold in the cornflakes cereal.
  4. Mix in the mini marshmallows just until combined.
  5. Scoop out 10 equally sized cookie dough balls, place them on a parchment lined baking sheet.
  6. Using your fingers, gently spread the cookies to form a cookie shaped cirle.

Ingredients 
 

  • 4 tbsp butter salted
  • 3/4 cup peanut butter smooth
  • 10 oz mini marshmallows
  • 1/3 cup peanut butter chips optional
  • 7 cups cornflakes
  • 1 oz mini marshmallows To mix in at the end
  • 2 tbsp peanut butter chips for drizzling
  • 1/2 tsp vegetable or canola oil

Instructions 

  • In a large pot over medium-low heat melt the butter, and the peanut butter. Add in the 10 oz of the mini marshmallows, stirring constantly until fully melted. Remove from heat.
  • Stir in the cornflakes until fully coated. Mix in the rest of the mini marshmallows (1oz) and the optional peanut butter chips and gently fold to combine. Don't overmix.
  • Spray a large cookie scooper with nonstick cooking spray and scoop out 10 equally sized peanut butter cornflakes balls onto a parchment-lined baking sheet. Grease your fingers and gently spread the cookies to about 1 inch in thickness. Don't pack them so they aren't too dense.
  • Melt the peanut butter chips and oil in the microwave in 30-second increments mixing in between every time. Pour the mixture n a ziplock bag and cut a small opening in the top of the bag and top each cookie with some peanut butter drizzle.
  • Let set for 20-30 minutes before serving.

    My daughters are currently obsessed with the Strawberry Frosted Flakes and want them made into cookies; any thoughts on how to tweak this recipe to accommodate?

      That actually sounds like such a fun twist! You could swap the cornflakes 1:1 with the Strawberry Frosted Flakes, drizzle white chocolate instead of peanut butter, and keep the rest of the recipe the same. Since the strawberry version is already coated in flavoring, you might want to cut back just a touch on the added marshmallows so it doesnโ€™t get overly sweet. I think your daughters would love that!
