I’m obsessed with Cornflakes, so indirectly, I’m obsessed with these no-bake peanut butter cornflake cookies. They have just the perfect amount of crunch without being too hard.

They also have a slight saltiness to them which makes them extremely addictive if we’re completely honest. I pretty much have handfuls of this cereal whenever it’s at the house because to me it tastes like a combination of crackers and cereal with hints of saltiness for my salt-addicted self.

This is the best no bake peanut butter cornflake cookie recipe ever!

Today, I decided to recreate a holiday crowd favorite, AKA the no-bake peanut butter cornflake candies or cookies. They are very similar to rice crispy treats with peanut butter but instead of using regular puffed rice, we will be using Cornflakes.

The secret ingredient to keep them extra chewy is the addition of the mini marshmallow at the end. It will help make these no-bake cookies a whole experience! Trust me!

  • Butter– Use salted butter for this recipe.
  • Peanut butter– Smooth peanut butter will work great. Make sure to use regular peanut butter and not the natural,healthier version as it wouldn’t allow these to set.
  • Marshmallows– Mini marshmallows are best for these Cornflakes krispy treats.
  • Peanut butter chips– These will be melted and drizzled on top of our no bake cookies for a gorgeous finish.
  • Oil- The oil is used to thin out the peanut butter chips for drizzling.
  • Cornflakes cereal– These are the star of this recipe and the things that will take the crunch factor to the next level. Make sure to use regular cornflakes cereal and not the frosted cornflakes.

How to make Crumbl cornflakes marshmallow cookies from scratch?

  1. Melt the butter and peanut butter together in a large pot.
  2. Add in the mini marshmallow and mix.
  3. Fold in the cornflakes cereal.
  4. Mix in the mini marshmallows just until combined.
  5. Scoop out 10 equally sized cookie dough balls, place them on a parchment lined baking sheet.
  6. Using your fingers, gently spread the cookies to form a cookie shaped cirle.
  7. Let set for 20-30 minutes before drizling with the peanut butter and oil mixture.

It’s preferable to keep these cookies at room temperature to keep them soft. Once they go into the fridge, they will become too hard to enjoy.

No, these cookies don’t freeze too well. They are best had the same day you. Freezing them will mess up the texture of these no-bake cookies, unfortunately.

Ingredients
 
 

  • 4 tablespoon butter salted
  • ¾ cup peanut butter smooth
  • 10 oz mini marshmallows
  • ⅓ cup peanut butter chips optional
  • 7 cups cornflakes
  • 1 oz mini marshmallows To mix in at the end
  • 2 tablespoon peanut butter chips for drizzling
  • ½ teaspoon vegetable or canola oil

Instructions
 

  • In a large pot over medium-low heat melt the butter, and the peanut butter. Add in the 10 oz of the mini marshmallows, stirring constantly until fully melted. Remove from heat.
  • Stir in the cornflakes until fully coated. Mix in the rest of the mini marshmallows (1oz) and the optional peanut butter chips and gently fold to combine. Don't overmix.
  • Spray a large cookie scooper with nonstick cooking spray and scoop out 10 equally sized peanut butter cornflakes balls onto a parchment-lined baking sheet. Grease your fingers and gently spread the cookies to about 1 inch in thickness. Don't pack them so they aren't too dense.
  • Melt the peanut butter chips and oil in the microwave in 30-second increments mixing in between every time. Pour the mixture n a ziplock bag and cut a small opening in the top of the bag and top each cookie with some peanut butter drizzle.
  • Let set for 20-30 minutes before serving.

    I’m going to order gluten free Corn Flakes on line since it is not available where I am. My two cousins and I are going on a road trip several hours away. We will be leaving very early in the morning (like, 5 or 6- – and I am not a morning person 😩), so I was wondering if I could make these the day before? Also, do you have other recipes using Corn Flakes, since the box they come in is pretty big and I don’t eat Corn Flakes normally. Thank you.

    Why? Why isn’t the recipe at the top of the page? Nobody comes here for meandering stories about how good somethign is. They come here for the recipe.

    Please put the recipe at the top, and put a “Jump to meandering story you didn’t come here for” button a the top. That way I can read your story while enjoying your recipe, instead of suffering in hanger while looking for what I came here for.

        Made a batch at for a bake sale. Kind of crumbly so I think I needed more marshmallows or pb to help bind it together better. But they tasted amazing. I used Honey Bunches of Oats with Almonds.

        Thanks so much for this recipe! I had some Trader Joe’s Cookie Butter on hand that wasn’t getting used very often, so for the 3/4 cup of peanut butter in the recipe I used half peanut butter and half cookie butter. Turned out delicious!

    Maybe it’s the type of pb I used, but it didn’t quite taste like Crumbls version. Either way it’s not bad to snack on

    Everyone loved these. Sweet, salty, crunchy, gooey… indulgent but not too rich. Melt everything low and slow, mix well, and you will be rewarded with the soft, toothsome results you crave. Great directions. This is a keeper.

    These are pretty close to the cookie crumbs! I totally get why you don’t add the peanut butter chips they do make it sweeter and makes it that more peanut buttery. Thank you for sharing the recipe 🥰🥰
