  • Butterโ€“ You can use either salted or unsalted butter for this recipe.
  • Brown sugarโ€“ The brown sugar is the main sweetening agent that will keep the cookies extra soft and chewy.
  • Granulated sugar-ย The granulated sugar is what makes the cookie edges a little crispy.
  • Eggโ€“ The egg is the binding agent for these cookies, the yolk also adds extra fat for mositure.
  • Vanilla extractโ€“ย The vanilla extract helps bring out the chocolate flavor even more.
  • Flourโ€“ You will need all purpose flour for this cookie recipe.
  • Dutch processed cocoa powderโ€“ The dutch processed cocoa powder will give a nice chocolatey flavor.
  • Baking sodaโ€“ The baking soda will give you extra height to your cookies.

How to make Crumbl Buckeye brownie cookies?

  1. Cream the butter, and both sugars until fluffy.
  2. Add in the egg and vanilla extract and mix.
  3. Combine the dry ingredients into the wet mixture and mix until the flour mixture disappears.
  4. Scoop out your cookie dough balls, place them on a baking sheet and gently press down to about 1 inch in thickness.
  5. Bake in the preheated oven, let them cool down on the baking sheet for 10 minutes, then transfer to a cooling rack.

Make the peanut butter buckeye topping

  • Mix the peanut butter, butter, sugar, and vanilla together until a thick paste forms.
  • Divide the peanut butter mixture into 7 equally sized balls.
  • Top each cooled down cookie with the peanut butter mixture, and press to flatten.
  • Top with the melted semi sweet chocolate and enjoy!

Crumbl Buckeye Brownie Cookie

These Crumbl Buckeye cookies are made with a thick brownie cookie base then topped with peanut butter fudge and drizzled with melted chocolate.

Ingredients 
 

  • 1/2 cup butter softened
  • 3/4 cup brown sugar packed
  • 2 tbsp granulated sugar
  • 1 large egg at room temperature
  • 2 tsp vanilla extract
  • 1 & 1/4 cup flour
  • 1/2 cup dutch processed cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Buckeye peanut butter layer

Instructions 

  • Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
  • Cream butter, brown sugar, and granulated sugar until light and creamy. Mix in the egg and the vanilla extract until combined.
  • Add the flour, cocoa powder, baking soda, and salt and mix until the flour mixture disappears. Scoop out 7 equally sized cookie dough balls with a large cookie scooper (about 1/4 cup), and place those cookies on a baking sheet leaving about 2 inches of space between each one.
  • Gently press down on the cookies to about 1 inch in thickness, and bake in the preheated oven for 10 minutes. Once the cookies are baked, let them cool down on the baking sheet for 10 minutes before transferring them to a cooling rack.

Peanut butter buckeye topping

  • In a medium bowl, whisk the peanut butter, butter, powdered sugar, and vanilla until a thick paste forms.
  • Divide the peanut butter mixture into 7 little balls, top each cooled-down cookie with a peanut butter ball, and press down gently to flatten.
  • Melt the semi-sweet chocolate chips, and top each cookie with it. Spread the melted chocolate and serve.
