This Brownie Pie recipe combines the goodness of fudgy brownies with the buttery taste of a flaky pie crust. If you ever wondered about how you could elevate your homemade brownies even further, this is the answer!

Ingredients for this easy brownie pie recipe

  • Unsalted Butter: adds richness and moisture to the brownie filling, giving it that classic fudgy texture.
  • Granulated Sugar: sweetens the filling while contributing to a crispy top crust when baked.
  • Brown Sugar: adds depth of flavor and extra moisture.
  • All-purpose Flour: binds the ingredients together to form the structure of the brownie filling.
  • Unsweetened Cocoa Powder: is the main source of the rich chocolate flavor.
  • Salt: balances out the sweetness and enhances all of the other flavors.
  • Vanilla Extract: adds warmth and complements the chocolate.
  • Eggs: bind the ingredients together and add structure.
  • Chocolate Chips or Chopped Chocolate: add pockets of melted chocolate throughout the filling for extra gooeyness in every bite.

How to make this fudge brownie pie recipe

This is how you can make this gooey brownie pie. Make sure to scroll down to the recipe card at the end of this post for the oven temp, bake time, and full step-by-step instructions! 

Prepare and Parbake the Crust

  1. Preheat your oven. If you bought one, roll out your store-bought pie dough and fit it into a pie pan, crimping or trimming the edges as desired. If you are using a homemade pie crust, do the same thing but with the homemade version 🙂
  2. Use a fork to prick the bottom of the crust, then line it with parchment paper and fill it with pie weights or dried beans.
  3. Bake until the edges of the crust begin to turn golden.
  4. Remove the parchment and weights, then bake until the bottom is slightly golden brown. Set aside to cool.

Prepare the Brownie Filling

  1. Lower the oven temperature. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  2. Add the eggs and vanilla extract, stirring until well blended.
  3. Gently fold in the flour, cocoa powder, and salt, then mix in the chocolate chips or chopped chocolate.

Assemble and Bake

  1. Pour the brownie batter into the parbaked pie shell, smoothing the top to an even layer.
  2. Bake until the top is set but the center remains slightly soft. A toothpick inserted in the center should come out with moist crumbs.
  3. Let the pie cool to room temperature to allow it to set completely.
  4. Slice and serve on its own or with a scoop of vanilla ice cream for an extra treat!

This technique helps set the crust, giving it a head start so it stays crisp and holds up well, even with moist fillings. In recipes like pie, quiche, or tarts, parbaking ensures the crust doesn’t turn soggy!

Ingredients
 
 

For the Crust:

  • 1 pie dough homemade or store-bought

For the Brownie Filling:

  • ¾ cup unsalted butter melted
  • ¾ cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup all-purpose flour
  • ½ cup cocoa powder
  • ½ teaspoon salt
  • 2 teaspoon vanilla extract
  • 2 large eggs
  • ¾ cup chocolate chips or chopped chocolate, or a mix!

Instructions
 

Prepare and Par Bake the Crust:

  • Preheat the oven to 400°F.
  • Roll out your pie crust and fit it into a pie pan. Crimp or trim the edges as desired.

  • Prick the bottom of the crust with a fork, then line it with parchment paper and fill with pie weights or dried beans.
  • Bake for about 10-12 minutes until the edges start turning golden.
  • Remove the weights and parchment, then bake for another 5-7 minutes until the bottom is slightly golden. Allow it to cool.

Make The Pie Filling

  • Lower the oven temperature to 350°F.
  • In a mixing bowl, whisk the melted butter, granulated sugar, and brown sugar until combined. Mix in the eggs and vanilla extract until a thick batter forms.
    ¾ cup unsalted butter, ¾ cup granulated sugar, ½ cup brown sugar, 2 teaspoon vanilla extract, 2 large eggs
  • Gently fold in the flour, cocoa powder, and salt, then mix in the chocolate chips or chopped chocolate. (or both!)
    ½ cup all-purpose flour, ½ cup cocoa powder, ½ teaspoon salt, ¾ cup chocolate chips
  • Pour the brownie filling into the parbaked crust, smoothing the top.
  • Bake for 40-45 minutes or until the top is set but the center still looks slightly soft. A toothpick should come out with moist crumbs when inserted in the center.
  • Let the pie cool to room temperature, allowing it to set further.
  • Slice and serve as is, or with a scoop of vanilla ice cream for extra indulgence!

    I’ve made the pie for thanksgiving & just the filling multiple times for friends & family it’s a hit! If you don’t like really chocolatey brownies these aren’t for you! But if you do MUST make them!!
