Roll out your pie crust and fit it into a pie pan. Crimp or trim the edges as desired.
1 pie dough
Prick the bottom of the crust with a fork, then line it with parchment paper and fill with pie weights or dried beans.
Bake for about 10-12 minutes until the edges start turning golden.
Remove the weights and parchment, then bake for another 5-7 minutes until the bottom is slightly golden. Allow it to cool.
Make The Pie Filling
Lower the oven temperature to 350°F.
In a mixing bowl, whisk the melted butter, granulated sugar, and brown sugar until combined. Mix in the eggs and vanilla extract until a thick batter forms.
3/4 cup unsalted butter, 3/4 cup granulated sugar, 1/2 cup brown sugar, 2 tsp vanilla extract, 2 large eggs
Gently fold in the flour, cocoa powder, and salt, then mix in the chocolate chips or chopped chocolate. (or both!)
1/2 cup all-purpose flour, 1/2 cup cocoa powder, 1/2 tsp salt, 3/4 cup chocolate chips
Pour the brownie filling into the parbaked crust, smoothing the top.
Bake for 40-45 minutes or until the top is set but the center still looks slightly soft. A toothpick should come out with moist crumbs when inserted in the center.
Let the pie cool to room temperature, allowing it to set further.
Slice and serve as is, or with a scoop of vanilla ice cream for extra indulgence!
