The Best Easy Chocolate Brownie Cookies Recipe

These brownie cookies are the perfect treat for all brownie and cookie lovers alike! Each cookie is soft and fudgy in the center with the most perfect crunchy exterior. The addition of the flakey sea salt will take it to a whole new level too! The best part is that they are made in just under 30 minutes!

These are the best and fudgiest brownie cookies ever!

Brownie cookies aren’t new but they deserve a lot more love than what they get. They are simple to make and perfect for serving crowds without the mess of slicing a super fudgy brownie. It’s the perfect way to indulge in your chocolate cravings while also satisfying those desires for a delicious cookie! 

These chocolate cookies specifically don’t require any chilling which makes them that much better. All you need to do is make the cookie dough, scoop it onto your prepared baking sheet and bake for the ultimate chocolate lovers dessert.

  • It’s the perfect cookie recipe if you love a cookie with crispy edges and a soft interior with intense chocolate flavor. 
  • This recipe requires no chilling, saving you a ton of time. I think this is the perfect weeknight cookie recipe!

Here are all the ingredients you will need to make this cho

  • Flour– All-purpose flour works perfectly for this recipe. 
  • Cocoa powder– Use unsweetened Dutch process cocoa powder, it will make these brownie cookies taste amazing! 
  • Baking powder- This will help keep our cookies extra tender. 
  • Salt– You always need a little bit of salt when you bake, it adds an amazing depth to the final product. 
  • Butter– The butter will add an incredible richness to this recipe. Unsalted butter is what we will need. If you want to use salted butter omit the pinch of salt that’s in this recipe. 
  • Dark chocolate chips– You can use either chocolate chips or chop up your own chocolate before melting. 
  • Egg– Make sure the egg is at room temperature. 
  • Brown sugar– Any brown sugar works for this recipe
  • Granulated sugar– You will need regular white sugar for this recipe too. 
  • Vanilla extract – Always add vanilla to your chocolate desserts to accentuate the chocolate flavors. 
  • Sea salt flakes for topping– This is optional but I highly recommend it! Salt and sweet go so well together. 

Try your hardest to weight the ingredients using a kitchen scale to make sure you get the same results as me. Since over measuring dry ingredients can result in tougher, less fudgy cookies!

  • A stand mixer or a hand mixer
  • baking sheet 
  • Parchment paper or silicone mat 
  • Small cookie scoop

How to make easy brownie cookies

This is how you can make this chewy cookie recipe! Make sure to scroll down to the recipe card for the full detailed recipe!

  1. Preheat the oven to 350F then line a large baking sheet with parchment paper and set aside.
  2. Mix all the dry ingredients in a small medium bowl. Make sure to sift the flour and cocoa powder if you need to.  
  3. In a small bowl melt the chocolate chips and butter together in the microwave in 30-second increments. Make sure to stir in between every time to keep that mixture from burning. 
  4. While the butter and chocolate are melting, whip on high speed the egg, vanilla extract, and both sugars in a whisk attachment or in a regular bowl using a hand mixer. Whip it for about 5 minutes or until the mixture is lighter in color and airy. 
  5. Add the melted chocolate mixture to the egg mixture and gently fold. Once that’s incorporated, add in the dry mixture and fold just until combined. 
  6. Using a small cookie scoop ( about 2 tablespoons worth of cookie dough), scoop out cookie dough balls onto the parchment paper-lined baking sheet, making sure to leave about 2 inches between the cookies. Top the cookie dough with a sprinkle of flaky sea salt and bake for 10 minutes. 
  7. Let the cookies cool then enjoy!

Frequently Asked Questions – FAQs

How can I store these brownie cookies?

Make sure that your cookies cool down fully before placing them in an airtight container and storing them at room temperature for up to 5 days. You can also store them in the fridge for a little longer. 

Can I freeze these cookies?

Absolutely! They freeze so well. Wait until they are completely cool before transferring them to a freezer bag/ ziplock bag or an airtight container and place them in the freezer for up to 3 months. 

Once you are ready to enjoy these cookies, thaw on the counter for a few hours or microwave for a few seconds to get them ooey gooey again.

Can I add chocolate chips to the cookie brownie batter?

You sure can! I would aim for ¼ cup of chocolate chips. You can use milk chocolate chips, white chocolate chips, or even semi-sweet chocolate chips!

Can I add nuts to these brownie cookies?

Of course, you can! One of the best things to add to brownies has to be walnuts or pecans. In this case, feel free to add about ¼ cup of chopped nuts of your choice and mix them in with the dry ingredients. I like mine toasted to add even more nuttiness to this great recipe!

How can I add extra chocolate flavor to these cookies?

One of my favorite things to do is to mix ¼ teaspoon of espresso powder into the melted butter mixture. Coffee tends to make the chocolate flavor even stronger without adding in any coffee flavor to the cookie itself. Plus you don’t have to worry about the caffeine content of that coffee because we are using such a small amount!

Can this recipe be made by hand? Meaning no electric mixer or stand mixer. 

I would not advise you to make this by hand because we want to mix the egg and sugar mixture very well to help us create that crackly top look. If the eggs aren’t whipped enough you might miss out on that which is what a brownie is all about!

Can I make this recipe without a microwave?

Of course! You can melt the butter and chocolate in a double boiler until fully combined and melted. Just make sure that the bowl isn’t touching the water. This will take a little longer but will still yield something insanely delicious!

Ingredients
 
 

  • ½ cup all purpose flour
  • 2 tablespoon cocoa powder
  • ½ tablespooon cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup butter
  • ¾ cup darkchocolate chips or chunks
  • 1 large egg at room temperature
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract

Instructions
 

  • Start by preheating the oven to 350F then line a large baking sheet with parchment paper or a silicone baking mat.
  • In a small bowl, mix together the flour, cocoa powder, cornstarch baking powder and salt. Set aside.
    ½ cup all purpose flour, 2 tablespoon cocoa powder, ½ tablespooon cornstarch, ½ teaspoon baking powder, ¼ teaspoon salt
  • In a microwave-safe bowl, melt the butter and chocolate chips in 30-second intervals. Make sure to stir in between each time. Once fully melted add in the cocoa powder and mix well to combine then set aside.
    ¼ cup butter, ¾ cup darkchocolate chips
  • While the butter and chocolate mixture in melting, whisk the room-temperature egg and both the granulated sugar and brown sugar using a stand mixer or a hand mixer. Beat on medium-high speed for 5 minutes or until the mixture is light and airy and has almost doubled in size.
    1 large egg, ¼ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon vanilla extract
  • Slowly add the chocolate mixture to the egg mixture and gently fold. Add in the dry ingredients to the wet mixture again and fold using a rubber spatula. Avoid over-mixing, you want to fold in the dry mixture just until it's combined.
  • Using a small cookie scoop (about 2 tablespoons worth), drop the batter in balls onto the parchment-lined baking sheet, leaving about 2 inches in between each cookie. Bake for 9 minutes.
  • Remove the cookies from the oven and let them cool for 5 minutes on the baking sheet before transferring them to a cooling rack to cool completely!

Notes

These cookies will last up to 6 days in an airtight container in the fridge or for 3 months in an airtight container in the freezer.

    Great brownie cookie recipe! Ours always turn out thin so I think we overmix too much versus fold when making this recipe with the family we are high altitude also. They do make great brownie cookies to make an ice cream sandwich as we tend to like that combo! Thank you for taking the time to share a lovely recipe! Keep up the great work! 🙂
