- 1/2 cup butter salted, or unsalted at room temperature
- 3/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 & 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup freeze-dried strawberries crushed into powder, measured as powder
- Additional granulated sugar for rolling cookies
Instructions
- Preheat your oven to 350ยฐF (180ยฐC) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, and vanilla extract until well combined.1/2 cup butter, 3/4 cup granulated sugar, 1 egg, 1/2 teaspoon vanilla extract
- Add in the flour, salt, baking powder, and freeze-dried strawberry powder to the wet ingredients, mixing until just combined.1 & 1/2 cup all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/3 cup freeze-dried strawberries
- Using a small cookie scooper (2 tablepsoon worth) scoop out 14 equally sized cookie dough balls, then roll each ball in additional granulated sugar. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.Additional granulated sugar for rolling cookies
- Bake for 9 minutes then remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

What is the correct flour measurement?
The amount stated in the recipe card is correct for both US and metric.
Baked as directed. Intense berry flavor. Great buttery soft texture. Overall, a delicious cookie and very easy to make. I recently had a Strawberry Cake Crumbl Cookie and this recipe looked the closest I could find on the internet. It packs a stronger berry flavor. I probably used close to 1 cup of strawberries to crush to end up with 1/3 cup of powder. I didn’t roll in sugar because I wanted to make a strawberry frosting like the Crumbl Cookie. Chahinez if you read this and can figure out that cookie you are my hero.

can dough be made ahead of time and frozen ? then defrost for 24 hrs before baking ?
Yes you sure can make and freeze ahead of time! And you don’t even need to thaw before baking, just add an extra minute or two to the baking time and bake from frozen.
I am not sure why the cookies stayed in the shape of a ball and after the 9 minutes I ended up using a glass to flatten them some and put back in for a few minutes. Also I got 20 cookies from the recipe stating expected 14. They are very pretty and taste as expected!
Iโm really glad they turned out tasty๐ The ball-shape could be from slightly more flour in the dough (even a few extra grams can make them hold their shape) or if the butter was a bit cooler when mixing. Next time, you can try gently pressing them down just before baking if you like them flatter. And getting 20 cookies just means yours were a little smaller, which means more to enjoy!
