- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. 
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, and vanilla extract until well combined. - 1/2 cup butter, 3/4 cup granulated sugar, 1 egg, 1/2 teaspoon vanilla extract 
- Add in the flour, salt, baking powder, and freeze-dried strawberry powder to the wet ingredients, mixing until just combined. - 1 & 1/2 cup all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/3 cup freeze-dried strawberries 
- Using a small cookie scooper (2 tablepsoon worth) scoop out 14 equally sized cookie dough balls, then roll each ball in additional granulated sugar. Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. - Additional granulated sugar for rolling cookies 
- Bake for 9 minutes then remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
