  • Olive oil – I prefer using olive oil for roasting the fresh tomatoes but feel free to use canola oil if that is all you have on hand.
  • Salt & black pepper
  • Fresh mozzarella cheese- This will give you the same result as the Starbucks sandwich, you can also add a little extra parmesan cheese to elevate your sandwich.
  • Basil pesto
  • Spinach
  • Focaccia roll – You can make your own but I think store-bought bread makes this much easier. If you don’t want to use focaccia feel free to use your favorite bread instead

  2. Slice your focaccia bread in half and spread the basil pesto on both sides
  3. Place sliced mozzarella on the bottom side of the sandwich.
  4. Top it with the roasted tomatoes, a few spinach leaves, and close the sandwich.

Ingredients 
 

  • 1 pint cherry tomatoes
  • 1 tbsp olive oil
  • salt & pepper to taste
  • 4 focaccia bread
  • 8 oz fresh mozzarella
  • 2/3 cup pesto
  • 1/2 cup spinach chopped

Instructions 

  • Preheat the oven to 425F.
  • Pour the tomatoes into a medium-sized baking dish, drizzle wioth the oil, a little salt and pepper to taste, and roast for 20-25 minutes or until they are bursting.
    1 pint cherry tomatoes, 1 tbsp olive oil, salt & pepper
  • While the tomatoes are in the oven roasting prepare the sandwich base by slicing the bread in half and spreading some basil pesto on both sides of the bread. Add a few slices of Mozzarella cheese on the bottom slice.
    4 focaccia bread, 8 oz fresh mozzarella, 2/3 cup pesto
  • Top with the roasted cherry tomatoes, a little spinach, and the top slice of bread.
    1/2 cup spinach
  • Bake in the oven for 5-10 minutes or until cheese is melty.

    just like starbucks, and super quickly and easy! we loved it. i do recommend going light on the pesto, i didnโ€™t think i overdid it but it was a bit powerful for my liking, so thatโ€™s all iโ€™d probably change next time!
