The Easiest Mediterranean Loaded Hummus

Published on September 9, 2020 - Updated on December 31, 2020 by Chahinez Leave a Comment

Spread the love

Loaded Hummus is one of my favorite dishes! I guess it could also be seen as a fun appetizer as well. It’s made by layering a smooth hummus base and topping it with tomatoes, cucumbers, chickpeas, herbs, roasted bell peppers… and enjoyed with flat bread or pita chips. This dish is fresh and screams comfort food!

I could live off of hummus if you asked me. The best way to make that hummus even more satisfying would be to load it up with everything I love! Of course, since I am from the mediterranean, that would be everything from herbs, onions, and even some toasted pine nuts!

The base of this recipe consists of the smoothest hummus… Seriously you won’t believe how good the texture is. The main secret to get your hummus as smooth as possible is to peel the chickpeas. Sure it might take a little time but trust me it’s absolutely worth it.

Ingredients for loaded hummus

To make this loaded hummus you will need:

  • Chickpeas- I used canned chickpeas because I wanted to save time. You can also cook your own!
  • Tahini- Tahini is sesame seed butter. It is used in making traditional hummus.
  • Garlic cloves– You will need a few garlic cloves to add a little kick!
  • Olive oil– Good tasting olive oil is a must.
  • Paprika– Paprika bring a nice smokiness to the hummus.
  • Salt– Salt to taste.
  • Lemon juice– Lemon to add some freshness.

When it comes to the toppings, you really can use whatever you like or have at the house! Here are the toppings that I used but feel free to sub whatever you don’t like or don’t have with something else.

  • Roasted red bell peppers
  • Kalamata olives
  • Radishes
  • cucumbers
  • Feta cheese
  • Red onions
  • Curly parley
  • Chickpeas
  • Pine nuts

How to make loaded hummus

Loaded hummus ingredients
  1. First, start by peeling the chickpeas by pinching them between your finger and thumb. This step is optional but I highly recommend it to get the smoothest hummus.
  2. Place the peeled chickpeas in the food processor, add in the tahini, olive oil, water, garlic cloves, paprika, salt, and the juice of half a lemon. Process until smooth. If the hummus is too thick for your liking add 1 teaspoon water at a time until you reach your desired consistency.
  3. Spread the hummus on a plate and top it with the optional toppings. Drizzle some good tasting olive oil and serve with flat bread or pita chips.

More topping ideas for loaded hummus

If the topping ideas I gave you were not enough, you could try some of these too!

  • Caramelized onions
  • Sprinkle some crushed red pepper flakes for a little extra kick.
  • Add some artichoke hearts to the mix
  • Use some watermelon radishes instead of the regular radishes to give it more of a pop of color.

Is hummus good for you?

Hummus is amazing for you! Because of all the ingredients used hummus is very nutritions and is packed with plant based protein. Some hummus recipe call for a ton of olive oil (which is good for you in moderation) but I used a little bit to give this hummus flavor and add water to keep the fat levels under control in this recipe.

Hummus is also an amazing anti-inflammatory food. Literally every ingredient to make the hummus has some sort of anti-inflammatory property to it. So eat up and enjoy all the health benefits that come with hummus!
