This recipe makes pretty large cookies and if you want to make them smaller you will get about 16 smaller cookies instead of 8 larger ones.
When it comes to baking them, bake for about 8 minutes instead of 10. Decorate as you would the large ones.

Iced oatmeal cookies – Crumbl copycat
Ingredients
- ½ cup butter softened
- ⅓ cup brown sugar
- ¼ cup granulated sugar
- 1 tablespoon vanilla extract
- 1 egg at room temperature
- 1 & ¼ cup old fashioned whole rolled oats
- 1 cup AP flour
- ¼ teaspoon cinnamon
- pinch of nutmeg
- ½ teaspoon baking soda
- ¼ teaspoon salt
Icing
- ¾ cup powdered sugar
- 1.5 tablespoon milk
- ¼ teaspoon vanilla
Instructions
- Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
- Cream the butter brown sugar, and granulated sugar together until combined. Add in the egg and vanilla and mix until light and fluffy.
- Mix in the flour, oats, cinnamon, nutmeg, baking soda, and salt, making sure to scrape the sides until the mixture is combined.
- Using a large cookie scooper, scoop out 8 equally sized cookie dough balls, place them on the prepared baking sheet, gently press down on the cookies to about 1 inch in thickness, and bake them in the preheated oven for 10 minutes. Make sure to not overbake them so they stay soft and gooey
- Let the cookies cool down on the baking sheet for 20 minutes then more to a cooling rack to cool down fully.
Make the glaze
- In a medium bowl, whisk the powdered sugar 1 tablespoon milk and vanilla together until combined. You can the mixture to be thick and creamy but thin enough to dip the cookies in. If it's too thick add 1 teaspoon milk at a time and mix.
- Dip the top of the cooled-down cookies into the vanilla sugar glaze then place them back on the cooling rack. Allow them to set fully before enjoying them!

These cookies were delicious! I used GF oats from Bob’s Red Mill and GF flour from King Arthur to meet my dietary restriction needs. All measurements were 1:1 with no adjustment needed. I did have to cook them for about 13-14 minutes to get the perfect golden color. They were just the right amount of sweetness and definitely satisfied my sweet tooth. Would definitely recommend, especially if you love iced oatmeal cookies!

The consistency of these cookies are great! I had to bake mine more like 13 minutes. I would probably add about 1/4 c more sugar on the second run. The cookies weren’t quite sweet enough for me. Great recipe! Thanks

Thank you for your honest opinion! I tried lowering the sweetness of the cookies to allow the icing to shine and bring in that extra hint of sweetness. We’re all about balance here but if you like them sweeter, the extra 1/4 cup of sugar would work perfectly!

These turned out so good!!! The dough was pretty sticky so I couldn’t form it into balls very well but once I chilled the dough in the fridge for an hour, they were good to go in the oven. The flavor was perfect and the cookie was sooo soft.
