This is how you can make this gooey brownie pie. Make sure to scroll down to the recipe card at the end of this post for the oven temp, bake time, and full step-by-step instructions!

Prepare and Parbake the Crust

  1. Preheat your oven. If you bought one, roll out your store-bought pie dough and fit it into a pie pan, crimping or trimming the edges as desired. If you are using a homemade pie crust, do the same thing but with the homemade version ๐Ÿ™‚
  2. Use a fork to prick the bottom of the crust, then line it with parchment paper and fill it with pie weights or dried beans.
  3. Bake until the edges of the crust begin to turn golden.
  4. Remove the parchment and weights, then bake until the bottom is slightly golden brown. Set aside to cool.

Prepare the Brownie Filling

  1. Lower the oven temperature. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  2. Add the eggs and vanilla extract, stirring until well blended.
  3. Gently fold in the flour, cocoa powder, and salt, then mix in the chocolate chips or chopped chocolate.

Assemble and Bake

  1. Pour the brownie batter into the parbaked pie shell, smoothing the top to an even layer.
  2. Bake until the top is set but the center remains slightly soft. A toothpick inserted in the center should come out with moist crumbs.
  3. Let the pie cool to room temperature to allow it to set completely.
  4. Slice and serve on its own or with a scoop of vanilla ice cream for an extra treat!

What is parbaking, and why do we do it?

“Parbake” literally means to partially bake somethingโ€”usually a crustโ€”before adding the filling. This technique helps set the crust, giving it a head start so it stays crisp and holds up well, even with moist fillings. In recipes like pie, quiche, or tarts, parbaking ensures the crust doesnโ€™t turn soggy!

How do I store leftovers of this brownie pie recipe?

Put your leftover fudgy chocolate brownie pie tightly covered in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. If you want to freeze, wrap individual slices in plastic wrap and foil, then freeze for up to 2 months.

What toppings can I add?

A scoop of ice cream or homemade cream cheese frosting are the most popular. For convenience, a spread of cool whip or store-bought caramel sauce also work. But if you want the best topping ever, try myย Brownie Frosting Recipe Ready In 4 Minutes. It’sย incredible. It will be sweet so grab a tall glass of ice cold milk and enjoy!!

What mix-ins can I add?

โ€‹Since we already have chocolate chunks in there, adding an equal amount of chopped nuts like walnuts or peanuts would be perfect. Or you could swap out the chocolate chips for peanut butter chips or white chocolate chips.
