I especially love making these when I want something festive but low effort, everything bakes in one pan, and the decorating is the fun part. Plus, letting kids help with frosting and sprinkles turns this into a really sweet Valentine’s Day baking activity without things getting too messy.

MAKE THE BUTTERCREAM

  1. Cream the butter and sugar together until light and fluffy.
  2. Add in the vanilla extract and the heavy cream and whip until fluffy again.

You can make these cookies with a paddle attachment and a stand mixer, a hand mixer or even by hand! You’ll just have to put in some extra elbow grease to make your frosting extra fluffy!

  • Use gel food coloring, not liquid, for vibrant pink frosting.
  • Don’t overbake: The bars should look slightly underdone in the center for a soft texture.
  • Use room temperature butter and egg for even mixing.
  • Cool completely before frosting or the buttercream will melt.
  • Chill after frosting for clean slices and sharper edges.

Frequently asked questions – FAQ

How to store sugar cookie bars?

You can store these sugar cookie bars in an airtight container in the fridge for up to 7 days. I like to have them chilled but if you prefer them a little softer, let them sit at room temperature for a few minutes to get the frosting to soften up a bit more.

Can I freeze Valentine’s day sugar cookie bars?

These soft frosted sugar cookie bars freeze so well even after being frosted. I like to flash freeze mine on a baking sheet or a flat surface before transferring them to an airtight container and freezing them for later. Just make sure that you are placing wax paper or parchment paper between each layer of cookie bars to keep the frosting and decorations intact.

Can I color my sugar cookie dough?

Absolutely! I didn’t color mine because I like the contrast between light cookie bar and pink buttercream but you can definitely play around with coloring your base as well. Add your food coloring when you add in the egg and the vanilla extract.

Can I make these ahead of time?

Yes! These sugar cookie bars are perfect for making 1–2 days ahead. Store them in the fridge and bring to room temperature before serving.

Can I make these without frosting?

You can, but the frosting is what makes them feel like Valentine’s Day sugar cookie bars. I highly recommend sticking with the frosting since it will help keep the flavors balanced as well.

Can I double this recipe?

Yes, double and bake in a 9×13 pan. Start checking at the same bake time and adjust as needed.
