Vegan Gut Healing Buddha Bowl |Meal-Prep|

Today’s recipe will be a quick lunch I came up with using leftovers that I had in the fridge. A little brown rice, some romaine lettuce, fresh tomato slices, avocado, kimchi, and a sprinkle of hemp seeds. This vegan gut healing buddha bowl should definitely be your next easy meal prep choice!

This article will be a tad bit shorter than my other ones because this recipe was somewhat random. I was hungry and it was lunch time so I went in the fridge and in an effort to empty it out before my next grocery trip I ended up with this delicious and healthy vegan gut healing buddha bowl!

Quick lunch; vegan gut healing buddha bowl with kimchi

What you will need:

  •  ½ cup of cooked brown rice, I went with short grained cooked brown rice because that’s what I had at the time. You could also go with quinoa or any other grain you might have in your fridge.
    • I used my rice cooker to make the rice the day before and stored it in an airtight container for future use.
  • ⅓ -½ chopped romaine lettuce,  this will add a crispy texture to the whole meal
  • ½ a tomato sliced
  • ½ of a small avocado or ¼ of a large avocado
  • ¼ cup of kimchi+ some of the brine
  • 1-2 tablespoon hemp seeds

How to make this bowl

  • First, start by layering the rice at the bottom of your Tupperware or plate.
  • Add in the chopped romaine lettuce, then the sliced tomatoes, then the avocado.
  • Top the salad with the kimchi and use some of the kimchi brine to dress your salad.
  • Sprinkle the hemp seeds over the tomato slices and enjoy your super easy gut healing meal.

What is Kimchi and what are its benefits:

Kimchi is a fermented vegetable dish. There are hundreds of varieties of kimchi available but the one that most Americans are familiar with is made from salted napa cabbage and spices. It also often has some other vegetables mixed into it, like radishes, onions, and garlic. It also often has a nice spicy kick to it thanks to the red pepper flakes added into the mixture.

Kimchi is a great probiotic source which means it is a health powerhouse! From the start, Nappa cabbage is extremely healthy, it is a great source of vitamin K, C, and B6. And since it is fermented, the excellent probiotic qualities may help with:

  • Inflammation
  • Digestive issues
  • Boosting your immune system
  • Overall gut health

So make sure you include some of this super food into your diet!

I paired this lunch with some fresh raspberries and peaches because it is finally fruit season!

This vegan lunch was the best and healthiest option for me to have after checking out what I had in my fridge, it requires minimal simple ingredients and will fill you up until your next meal time!
