Hope this article finds you doing well! I, for one have been trying to take care of myself a little extra these past couple of days because of the current situation.
Staying at home because of this COVID-19 quarantine definitely has its ups and down, but you just have to take it one day at a time.
For the past couple of weeks, I have been going crazy in the kitchen. I have made everything from homemade pasta to 72 hour bread and pizza crust… and to be honest it’s starting to show. Not that that’s a bad thing but it was just a little reminder to also make some healthy recipes here and there!
I am not mad about that though because I used to bake healthy desserts pretty often so I have a whole bunch of recipes I can share with you! Just like this vegan black bean brownie recipe 🙂
This healthy, gluten-free and vegan brownie has been my favorite for years because of how fudgy it is. It contains no processed foods so you won’t feel guilty having it al all.
What’s so special about these black bean brownies?
I love brownies! I have so many brownie recipes on my blog already and I still wanna bring you guys a whole lot more. So by now, you should know that I am an absolute lover of moist and rich brownies. Which is why I tried recreating something similar to that with these vegan bean brownies.
I made them to be flourless so they will fit perfectly in a gluten free diet. They contain no processed ingredients and are rich and melt in your mouth!
Another thing that I am absolutely obsessed with for this one is the fact that it is a recipe that uses pantry essentials.
What is a vegan black bean brownie?
Vegan black bean brownies are everything you have been wishing for! It is a vegan brownie that is made using black beans as its base. These brownies are high in protein, high in fiber and very low in guilt. When making these healthy treats, I opted to use unprocessed ingredients to keep these sugar-free and oil free for the perfect vegan snack.
Does it taste like black beans?
Well… yes and no. By that I mean that this brownie doesn’t taste like your regular brownies. You can definitely tell that it is healthy, there is a slight hint of black beans but the chocolate chips cover it very quickly.
What ingredients do you need to make vegan black bean brownies?
Here are the ingredients that I used for this recipe, I linked some of the products you could purchase to make it easier on you!
- Black beans – This is a great pantry essential, so everyone should have some of these at the moment!
- Flax seeds – Flax seeds are the perfect substitute for eggs in vegan baking. If you need more egg substitutes check this 7 best egg substitutes in baking!
- Water – water is also used to make the flax eggs.
- Apple sauce– We are using apple sauce. to substitute for the oil in this recipe. Yay for oil free brownies!
- Dates – Dates are the main thing that sweetens our brownies, keeping these brownies processed sugar free!
- instant coffee – If you’ve seen other chocolate posts of mine, I always love putting coffee with chocolate!
- vanilla– Vanilla is always a must.
- Cocoa powder –
- Baking soda – This will give a little bit of leavening to the brownies.
- Salt – salt to give an extra depth.
- Chocolate chips– Can’t make brownies without chocolate chips!
How to make vegan black bean brownies?
- First, start by preheating the oven to 350F and line an 8×8′ baking sheet with parchment paper and set aside.
- Start by making your flax seed egg. In a small bowl combine the 2 tablespoons of flax seeds with the 5 tablespoons of water, stir using a spoon and let it sit for 10-15 minutes until it thickens a little.
- Now in your food processor, ad the date, rinsed and drained canned beans, the flax egg, the apple sauce, the instant coffee, vanilla, cocoa powder, baking soda, salt and pulsate until it becomes smooth and thick. Make sure to scrape down the sides from time to time to get everything blended properly. Add ½ of the chocolate chip and stir with a spatula.
- Pour the black bean brownie batter in the prepared baking dish, spread it evenly and top with the rest of the chocolate chip. Bake in the preheated oven for 30 minutes, the brownies will be ready when the top is cracked, set and the center is not too jiggly.
Let the brownies cool completely, them place them in the fridge for an hour or two before slicing them into 16 squares
How to store these black bean brownies?
To store these vegan treats, place them in an airtight container and put that in the fridge. When storing these vegan high fiber brownies in the fridge they will last for about 4 days.

Can you freeze vegan brownies?
Yes! You absolutely can.
First, place them on a flat baking sheet lined with parchment paper, freeze them for 2-3 hours then transfer them to an airtight container or a plastic wrap and place them in the freezer. This technique will ensure that the brownies don’t freeze into a giant ball.
When you are ready to eat these, pull them out of the freezer and microwave them for 10-20 seconds to get them tasting as good as new!
