This delicious treat was inspired by traditional buckeye balls but I wanted to go the extra mile in bringing you guys something different and special. I think these are a bit smaller, and a whole lot easier to dip than the regular buckeye peanut butter bites.
What’s so special about these buckeye PB bites?
They’re SWEET AND SALTY! Need I say more? I think not… But I still will.
These buckeye pretzel bites combine both sweet and salty as well as crispy and soft to bring you this heavenly dessert/ snack or whatever you’d like to call it. They are also a no bake dessert, and if you’re like me, you always need no bake desserts because you take on too much then get overwhelmed.
Trust me, you will probably have a very hard time not eating most of them yourself… But be careful this recipe does make a pretty large batch so if you want a little less so you can be sure to devour them yourself cut it in half or so 🙂
I made them for the holidays so I needed a pretty big batch to satisfy everyone I was gifting them to.
What ingredients do I need for peanut butter buckeye pretzels?
- Snyder’s of Hanover Pretzels
- Skippy peanut butter- Make sure to not use those all natural peanut butters because the mixture will stay too loose. So for once, I am encouraging you to use a nice and processed peanut butter!
- Butter
- Powdered sugar
- Almond flour- I added in some almond flour to use a little less powdered sugar. On a lot of the recipes shared online the sugar amount is quite large, so by substituting some of that with almond flour you can have a more balanced treat!
- Semi sweet chocolate chips– Make sure to use really good tasting chocolate because a good portion of these treats is coated in chocolate so use good quality chocolate!
- Coconut oil or vegetable oil– This will help make the chocolate more smooth and dip-able!
- Sea salt flakes (optional)– I love adding salt to my sweets because it gives a nice balanced flavor to the end product. Since we are using pretzels to start with the salt works really well here.
How to make these peanut butter buckeye bites? “step by step”
Start by placing all your pretzels on a parchment lined baking sheet.
In a large bowl or a stand mixer, mix the peanut butter and butter just until combined.
Add in the brown sugar and vanilla and mix again until combined.
Add in the powdered sugar and almond flour until combined. Do not over mix. If the mixture is too sticky add ¼ cup of powdered sugar at a time until it holds together.
Roll the peanut butter mixture into balls using about 1 rounded teaspoon of the PB mixture and place them on the pretzels prepared on the baking sheet
Top the peanut butter mixture ball with another pretzel and gently press down . Freeze for 30 minutes.
Melt the chocolate and coconut oil and dip the pretzel bites diagonally then set back on the parchment paper.
Sprinkle each one with some sea salt, this step is optional but I highly suggest you do it! Then place bake on the freezer to set.

What other toppings can I add to my pretzel bites?
I went for the sea salt flakes because I’m practically obsessed with doing that to all my chocolate treats, but you cal absolute go with something else. Some other toppings I’d recomend would be:
- Sprinkles- depending on the time of the year you could go with different sprinkles. For example; little heart for valentine’s day, colorful sprinkles for birthday parties… etc
- Crushed up pretzels- what goes better on pretzels than pretzels huh!? If you are a crunch addict this is for you 😉
- powdered sugar- Make sure to do this after your chocolate has set and to serve them immediately. Otherwise the sugar will dissolve and disappear.
- Drizzle extra chocolate on top- Again, what goes better on chocolate than chocolate?! You could take white chocolate and drizzle that on top for a super fancy looking dessert 🙂

Buckeye Pretzel bites Recipe
Peanut butter buckeye pretzel bites
Ingredients
- 2 cup peanut butter
- ½ teaspoon vanilla extract
- 1 tablespoon brown sugar
- 6 tablespoon butter softened
- 2 cups powdered sugar
- 1 cup almond flour
- 1 bag Snyder snaps pretzels family size
Chocolate coating
- 3 cups semi sweet chocolate chips
- 2 tablespoon coconut oil or vegetable oil
Instructions
- Line a large baking sheet with parchment paper and place about 130 pretzels on there. If the baking sheet is not large enough, get another one and line is with parchment paper as well before using.
- In a medium bowl or in a stand mixer bowl, cream the peanut butter and butter until evenly combined. Add in the brown sugar and vanilla and mix again quickly. Lastly add in the powdered sugar and almond flour and mix just until combined, DO NOT OVER MIX! If it's too sticky add in ¼ of a cup of powdered sugar at a time until the mixture reaches a consistency that is easy to roll.
- Roll the peanut butter mixture into balls using about 1 rounded teaspoon of filling. Place the peanut butter ball on of the pretzels prepared on the baking sheet and place another pretzel on top and gently press down to sandwich the peanut butter ball. When you finish all the pretzels place in the freezer for 30 minutes.
- In a medium bowl, melt the chocolate chips and coconut oil in the microwave using the 30 second increment method. Continue the process until the chocolate is completely melted.
- One at a time dip the pretzel bites diagonally into the chocolate, set on the parchment paper and sprinkle with a little sea salt. Repeat this process until you are done with all the buckeye pretzel bites. Place the baking sheets in the freezer again until the chocolate hardens completely, about 10-15 minutes.
- Store in an airtight container in the freezer for up to a month. I find it that these taste better right out of the freezer but depending on your preference you can store them in the fridge and have them straight from there. In the fridge they will last about 5 days.
