Last week’s cookie haul was amazing! Of course, the CRUMBL Strawberry shortcake cookie was the one that stood out the most to me. It was not overly sweet especially with the vanilla mousse frosting on top. It tasted like a cloud and balanced out the flavors so well!

Even though these cookies don’t have any fresh strawberries in them the combination of the strawberry cookie base and the strawberry shortcake streusel will make it taste almost better than a regular shortcake dessert!

This was actually my first time making strawberry cookies using cake mix and was very pleasantly surprised at how they turned out so I am so excited for you to try them!

These were really tasty! I decided to broaden the recipe with other flavors too. As long as you can find a Jello and a cake mix that match flavors, you’re good to go! I made the strawberry shortcake, blueberry cake with lemon frosting, orange cake with chocolate frosting, and pineapple cake with coconut frosting. I also plan to make a cherry chip cake with cheesecake frosting but I’m waiting on some ingredients that I needed. All of the flavors turned out really great and yummy. I recommend experimenting!
Definitely a nice delicate sweetness to these light cookies.

I was really excited for this recipe but the cookie was very thick and sticky before baking and with gummy texture after baking. I didn’t like it. It didn’t taste like cookie at all. The vanilla mousse and strussel came out tasty.

      2. Chahinez says:

It sounds like your dough may have had too much moisture or was overmixed. Next time, try using a kitchen scale instead of measuring cups for better accuracy and you could chill the dough for 20–30 minutes before baking.

    2. Michelle says:

can I freeze the mousse and use later?

      1. Chahinez says:

No, it’s generally not recommended to freeze mousse as it can change the texture significantly.

is it just the mix you add or prepared pudding?

    1. Chahinez says:

You’ll just use the dry mix from the pudding packet, no need to prepare it first.

  10. Lily says:

Do you only need to add in a jello packet in this recipe or does it require us to make the jello then add it in?

    1. Chahinez says:

You only need the dry strawberry jello powder, not prepared jello. It gets mixed into the streusel to give it color and flavor.
