This is the best Strawberry pop tart cookie
This week Crumbl had the strawberry pop tart cookie in their roster which made me so happy because I’ve been wanting to try it and recreate it for ya.
It tasted good, but similar to all their other cookies. At this point, I really believe that they have a few base cookie recipes and they just change up one thing and call it a different name for clout.
In this case, I used a basic sugar cookie from a lot of the Crumbl copycat recipes I’ve shared before but tweaked it just enough to hold that strawberry jam in the middle perfectly.

Ingredients for this strawberry pop tart cookies

- Egg– Use an egg at room temperature.

- Flour– AP flour works great for this.
- Salt– Always use a little salt in your baked goods to balance out the sweetness.
- Baking powder– The baking powder adds a little height to the cookies.
- Strawberry jam – Use good quality strawberry jam for best results.
- Pop tart bites – This is optional but will make your cookies cute!
- White chocolate– You can use white chocolate of white candy melts.
- Oil– Any unflavored oil works here, think canola or vegetable oil.
How to make strawberry pop tart cookies

- Cream the butter and sugars together.
- Add in the vanilla butter emulsion and the egg and mix to combine.
- Mix in the dry ingredients just until the flour mixture disappears.
- Scoop the cookie dough, bake a well in the center with the back of a tablespoon and fill with strawberry jam.
- Fold the edges over and make sure to seal well.
- Place on a baking sheet and bake.
- Let the cookies cool down before topping them with melted white chocolate and sprinkles.

How to store strawberry pop tart cookies
You can store these cookies in an air-tight container at room temperature for up to 4 days.
You can also store them in the fridge for up 7 days, just microwave them before enjoying them so they’re warm and ooey gooey again.
Can I freeze strawberry pop tart cookies?
Absolutley! These cookies freeze well. I would flash freeze them for the chocolate doesn’t stick to the bottom of whatever cookie is stacked on top.
After flash freezing them, transfer them to an air-tight container and freeze for up to 3 months.
Once you’re ready to enjoy these cookies, thaw in the fridge overnight or microwave for a few seconds and enjoy!

Can I use a different filling?
Yes! You can stuff these cookies with any other jam, think blueberry jam, apricot jam, or even grape jam.
To make different flavored pop tarts (think s’mores pop tarts) you could play around with either marshmallows or marshmallow fluff and chocolate chips.
My biggest tip is to make ONE trial cookie first if you change up the fillings and see how the ratios work for you.
Can I make smaller strawberry pop tart cookies?
You sure can, instead of making 6 large cookies, you can make 12 smaller ones. Fill with 1 tsp of jam instead of 1/2 tbsp and bake for 9 minutes.

Strawberry pop tart cookies – CRUMBL copycat
Ingredients
sugar Cookie base
- 1/2 cup butter softened
- 1/3 cup granulated sugar
- 3 tbsp brown sugar
- 1 egg at room temperature
- 2 tsp butter vanilla emulsion Use regular vanilla instead if you don't have this but I highly suggest you grab a bottle.
- 1 & 1/2 cup all purpose flour
- 1/4 tsp salt
- 3/4 tsp baking powder
- 1/3 cup strawberry jam
white chocolate
- 1/3 cup white chocolate or white candy melts for a whiter look
- 1 & 1/2 tbsp oil unflavored, vegetable, canola, or coconut oil
- red sprinkle for topping
Instructions
Make the sugar cookie base
- Preheat the oven to 350F then line a baking sheet with parchement paper and set it aside.
- Cream the butter, granulated sugar, and brown sugar together until smooth and creamy.
- Whisk in the egg, the butter vanilla emulsion, butter flavoring (optional), and mix until combined.
- Mix in the flour, baking powder, and salt until the flour mixture disappears. Don't overmix your dough. Then using a large cookie scooper scoop out 6 equally sized cookie dough balls.
- Use the back of a 1 tbsp measuring scoop, make an indentation in the cookie then fill with about 1/2 tbsp of strawberry jam. Seal the edges carefully, then gently roll the cookie dough into a ball. Place on the baking sheet, then repeat the process.
- Bake the cookies for 10 minutes, and let the cookies cool down on a cooling rack before topping with the melted white chocolate and oil mixture. Add sprinkles and enjoy.
Make the topping
- Microwave the white chocolate and the oil in a microwave-safe bowl, stir every 30 seconds, then microwave again until fully melted.

Hi, do you think the cookie dough be made and stuffed with jelly ahead of time and then refrigerated or frozen until ready to bake?
Yes you got it! Make the dough into balls with jam already inside and freeze them on a baking sheet. Once frozen solid, you can stack them in a bag or container and use for later.
Do these freeze well after baking? If so, for how long?
Yes they do! If they’re in an airtight container with a tight seal, they can last up to 3 months.
I made these cookies today and they came out Awesome! Followed the exact directions, only thing different I did put them in the fridge for 15 min before I put the jam inside and then again for 10 minutes after I stuffed them before I baked. Was easier to mold for me that way, Not one leaked all 6 came out great!

These taste amazing. First time I have done a stuffed cookie , any tips on getting the jam to spread inside ?as it stayed in a blob in the middle .
So glad you loved them! The type of jam you use can make a difference—thicker jams or preserves tend to stay in a blob, while a smoother, slightly runnier jam spreads more evenly. You can also warm it up just a bit before filling the cookies and gently flatten it before sealing the dough around it. That should help it spread nicely as it bakes!
These were delicious, but my filling did not spread evenly. That would have made them perfect. I will try again at some point, but the flavor of these is amazing!

it would be annoying to do, but if you want it perfect and you have the time to do so, you could get a small pan and line it with saran wrap. measure the amount of jam in spots away from eachother and spread them each out into circles/discs, then freeze. they should pop off the saran wrap, maybe spritz the saran wrap with Pam just in case but I doubt it’d matter, then shape the cookie dough around the frozen disc.
while sugar doesn’t freeze 100% a thin disc of jam should freeze fine. you could always swap it for a low sugar jam, or a homemade one with less added sugar if regular jam doesn’t freeze solid.
the disc type insert like this is used to get an even spread of lots of different things in baking/cooking. if it works you could even layer flavours. (strawberry/blueberry) and have one colour evenly over the other when you bite it

I made two dozen for a birthday party.
If you’ve never stuffed cookies before the. It can be a learning curve.
I did find it easier to do when the dough was cold, my warm hands caused the cookie dough to g egg sticky which made it harder to fill with the jam.
All in all and yummy recipe and I will definitely make them again!

I struggled a bit to keep the jam inside when folding. It didn’t come out evenly distributed when I baked. User error! But I will definitely try again.

It’d be best to make the dough into balls with the filling and then freeze those and store for later.
This was the best recipe. Made them for my work peeps and they I bought crumble cookies. I used raspberry jam instead of strawberry and it was spot on. The dough was soft and buttery. It was perfect with the white chocolate. Thanks for a wonderful recipe.
