This is the best Strawberry pop tart cookie
This week Crumbl had the strawberry pop tart cookie in their roster which made me so happy because I’ve been wanting to try it and recreate it for ya.
It tasted good, but similar to all their other cookies. At this point, I really believe that they have a few base cookie recipes and they just change up one thing and call it a different name for clout.
In this case, I used a basic sugar cookie from a lot of the Crumbl copycat recipes I’ve shared before but tweaked it just enough to hold that strawberry jam in the middle perfectly.
Why do you need to make this recipe!
- It tastes just like a pop tart but better.
- This recipe is so easy to make.
- You will be able to enjoy your favorite Crumbl recipe anytime, no need to wait for it to come back in stores months from now.
- This recipe will save you a ton of money because, at $5 a pop, it adds up quickly.

Frequently asked questions – FAQ
How to store strawberry pop tart cookies
You can store these cookies in an air-tight container at room temperature for up to 4 days.
You can also store them in the fridge for up 7 days, just microwave them before enjoying them so they’re warm and ooey gooey again.
Can I freeze strawberry pop tart cookies?
Absolutley! These cookies freeze well. I would flash freeze them for the chocolate doesn’t stick to the bottom of whatever cookie is stacked on top.
After flash freezing them, transfer them to an air-tight container and freeze for up to 3 months.
Once you’re ready to enjoy these cookies, thaw in the fridge overnight or microwave for a few seconds and enjoy!
Can I use a different filling?
Yes! You can stuff these cookies with any other jam, think blueberry jam, apricot jam, or even grape jam.
To make different flavored pop tarts (think s’mores pop tarts) you could play around with either marshmallows or marshmallow fluff and chocolate chips.
My biggest tip is to make ONE trial cookie first if you change up the fillings and see how the ratios work for you.
Can I make smaller strawberry pop tart cookies?
You sure can, instead of making 6 large cookies, you can make 12 smaller ones. Fill with 1 teaspoon of jam instead of ½ tablespoon and bake for 9 minutes.

sugar Cookie base
- ½ cup butter softened
- ⅓ cup granulated sugar
- 3 tablespoon brown sugar
- 1 egg at room temperature
- 2 teaspoon butter vanilla emulsion Use regular vanilla instead if you don't have this but I highly suggest you grab a bottle.
- 1 & ½ cup all purpose flour
- ¼ teaspoon salt
- ¾ teaspoon baking powder
- ⅓ cup strawberry jam
white chocolate
- ⅓ cup white chocolate or white candy melts for a whiter look
- 1 & ½ tablespoon oil unflavored, vegetable, canola, or coconut oil

Instructions
Make the sugar cookie base
- Preheat the oven to 350F then line a baking sheet with parchement paper and set it aside.
- Cream the butter, granulated sugar, and brown sugar together until smooth and creamy.
- Whisk in the egg, the butter vanilla emulsion, butter flavoring (optional), and mix until combined.
- Mix in the flour, baking powder, and salt until the flour mixture disappears. Don't overmix your dough. Then using a large cookie scooper scoop out 6 equally sized cookie dough balls.
- Use the back of a 1 tablespoon measuring scoop, make an indentation in the cookie then fill with about ½ tablespoon of strawberry jam. Seal the edges carefully, then gently roll the cookie dough into a ball. Place on the baking sheet, then repeat the process.
- Bake the cookies for 10 minutes, and let the cookies cool down on a cooling rack before topping with the melted white chocolate and oil mixture. Add sprinkles and enjoy.
Make the topping
- Microwave the white chocolate and the oil in a microwave-safe bowl, stir every 30 seconds, then microwave again until fully melted.

I made these cookies today and they came out Awesome! Followed the exact directions, only thing different I did put them in the fridge for 15 min before I put the jam inside and then again for 10 minutes after I stuffed them before I baked. Was easier to mold for me that way, Not one leaked all 6 came out great!
Chahinez
That’s great! Thank you so much for trying the recipe! 😁
Heidi
These were delicious, but my filling did not spread evenly. That would have made them perfect. I will try again at some point, but the flavor of these is amazing!

it would be annoying to do, but if you want it perfect and you have the time to do so, you could get a small pan and line it with saran wrap. measure the amount of jam in spots away from eachother and spread them each out into circles/discs, then freeze. they should pop off the saran wrap, maybe spritz the saran wrap with Pam just in case but I doubt it’d matter, then shape the cookie dough around the frozen disc.
while sugar doesn’t freeze 100% a thin disc of jam should freeze fine. you could always swap it for a low sugar jam, or a homemade one with less added sugar if regular jam doesn’t freeze solid.
the disc type insert like this is used to get an even spread of lots of different things in baking/cooking. if it works you could even layer flavours. (strawberry/blueberry) and have one colour evenly over the other when you bite it

Can these be left out on the counter for a couple days in a sealed container?

Easy recipe to follow!
I made two dozen for a birthday party.
If you’ve never stuffed cookies before the. It can be a learning curve.
I did find it easier to do when the dough was cold, my warm hands caused the cookie dough to g egg sticky which made it harder to fill with the jam.
All in all and yummy recipe and I will definitely make them again!
Chahinez
I’m glad you liked the recipe!

I made these tonight and they are delicious!
I struggled a bit to keep the jam inside when folding. It didn’t come out evenly distributed when I baked. User error! But I will definitely try again.
We loved adding the mini poptart on top.
Chahinez
Yay! I’m happy you loved the mini pop tart!😁
Michelle
Another perfect recipe! I made these for my friends, and they all said they were better than the original crumbl 👏🏼 The butter emulsion really makes the cookies pop!
Chahinez
Thank you so much Michelle!

This was the best recipe. Made them for my work peeps and they I bought crumble cookies. I used raspberry jam instead of strawberry and it was spot on. The dough was soft and buttery. It was perfect with the white chocolate. Thanks for a wonderful recipe.
Chahinez
You are so welcome Kari!
Promise
These cookies are delicious! They taste just like and have the same consistency as pop tarts! I don’t really like pop tarts, but I love these cookies!
Chahinez
Thank you Promise! Enjoy!

I made these but instead of a white chocolate topping, I did a little cream cheese and marshmallow fluff, omg my favorite ever!
Chahinez
That’s awesome!

Could not be better than fresh out of the oven!
I used blackberry jam from berries I picked on the Oregon coast. I should have flattened them more as they turned out kinda thick but they were delish. Thanks for posting. Love all of your recipes.
Chahinez
Black berry jam in these sounds wonderful! So glad you enjoyed it:)
Vickie
Do you flatten the cookies before baking!
Chahinez
No need to flatten.

Is it possible that these were better than poptarts!? This was by far my favorite copycat recipe of all time! These tasted less like a poptart and more like a really expensive pastry 😋
I subbed the strawberry jam for raspberry and WOW 😍
Fam gobbled them up in a day! Will be making again.
Allison
These were melt in your mouth delicious! They didn’t taste like a poptart, but instead a really expensive pastry. I subbed strawberry jelly for raspberry preserves. My family gobbled them down in a day! A total hit!
Chahinez
Hey as long as they tasted like a really expensive pastry I’m happy!! The raspberry jam sounds wonderful!
Samantha Renee
These came out so adorable and very delicious. I will say my batter was very sticky which made it hard to handle, put the jelly in, and close back up. In the end, only 1 leaked so I did pretty good. I had to add 3 minutes to the bake time. They were soft, how I like cookies, but I think a longer bake time would make it taste even more like a pop tart. For the topping I used white chocolate (which is what Crumbl uses) and put white coloring in it to make it less yellow. Everyone thought they were super good and fresh with the jelly filling!
Chahinez
Love the thorough review!! So glad you and your family loved them.
Jorden
I made these and they turned out so good! I didn’t have butter vanilla so just used regular and they were awesome. They are pretty hefty cookies but loved them so much! Also lasted for a few days without getting soggy which was awesome!
Chahinez
They sure are hefty! So glad you enjoyed these 🙂
