These past few years, Crumbl has amped up their new flavor cookie releases and this Crumbl cookie dough cookie is a product of just that! IT is made with a thick brown sugar cookie, if you’ve been here before you know how much I love brown sugar cookies! So I got to work to transform this holiday brown sugar cookie into a thick and chewy one that can be enjoyed chill and would mimic the flavor of the Crumbl cookies exactly! I’m proud to say we succeeded and it’s better than the real thing because it’s made with love in the comfort of your own home.
This is the best Crumbl cookie dough recipe ever!
For the Crumbl cookie dough cookie, the description said that the frosting is an ice cream frosting, and trust me, I have a little secret to bringing ice cream front and center into the cookie dough frosting.
Plus in this recipe, we will not skimp on the cookie dough bites, we’re gonna make a good amount so that you have some in each bite. Just how I know you like it.

Ingredients for this Crumbl cookie dough cookie recipe
Here are the ingredients you will need to make this cookie dough ice cream cookie recipe. Make sure to scroll down to the recipe card for the full detailed ingredient measurements.
- Butter– You can use either salted or unsalted butter for this recipe.
- Brown sugar– This is a brown sugar cookie so we will be using brown sugar mainly to sweeten it.
- Egg– The egg will be the binding agent of this recipe, make sure to use an egg at room temperature.
- Vanilla extract– The vanilla extract will add depth of flavor to both the cookie recipe, cookie dough, and frosting.
- Flour– You will need AP flour for the brown sugar cookie, for the cookie dough you can use the same flour, just make sure to microwave it for at least 60 seconds to kill all the bacteria.
- Corn starch– The corn starch will make the cokies extra soft and chezy.
- Baking soda & baking powder– The baking and baking powder will add a little leavening to the cookies.
- Salt- Always add a little salt to your baked goods.
- Powdered sugar – The powdered sugar will be used to make the frosting for the cookies.
- Mini chocolate chips– The mini chocolate chips will go into the cookie dough as well as ontop of the frosting.
- Heavy cream – The heavy cream will be used in the edible cookie dough recipe.
- Vanilla ice cream– In order to stay true to the recipe, we are using actual ice cream in the frosting because why not!
Ingredient substitutions
Vanilla ice cream- if you don’t mind not having an ice cream frosting, you can just use heavy whipping cream instead of the melted ice cream. No grocery trips are necessary here!
How to make the Crumbl cookie dough cookies
This is how you can make these cookie dough-inspired ice cream cookies Make sure to scroll down to the recipe card for the full detailed instructions!
Make the edible cookie dough
- Cream the butter, brown sugar, and granulated sugar together.
- Add in the vanilla extract, and the heavy cream and mix to combine.
- Mix in the heat treated flour, and the chocolate chips.
- Roll into tiny bite sized cookie dough balls.
- Place on a plate or bowl and chill in the freezer while you make the rest of the components of this recipe.
Make the brown sugar cookies
- Cream the butter, and the brown sugar together until smooth.
- Add in the egg, and vanilla extract and mix to combine.
- Mix in the dry ingredients until the flou rmixture disappears.
- Scoop out euqlly sized cookie dough balls, place on a baking sheet, and bake in the preheated oven.
- Let the cookies cool down while you make the ice cream froting.
Make the ice cream buttercream
- Cream the butter until smooth.
- Add in the powdered sugar, melted ice cream, and vanilla, and whip until fluffy.
- Fold in half the chilled cookie dough bites, and frost the cookies.
- Decorate each cookie with more cookie dough bites and mini chocolate chips ane enjoy!

Yes! You can freeze these cookies in an airtight container for up to 2 months. You can let the cookies thaw in the fridge overnight before enjoying them the next day!
Help my frosting is hard after chilling the cookies!
Since these the cookie dough icecream inspired frosting is made with butter it will naturally harden in the fridge. Make sure to let the cookies sit at room temperature for a little while to soften up before enjoying it.
Can I make catering sized Crumbl cookie dough cookies?
Absolutely!
Instead of making 7 cookies, it will make 14 smaller-sized cookies (so double the number of cookies for the same batch size.)
Meaning scoop out 7 equally sized cookie dough balls with a large cookie scooped and then split those in half, roll, and then bake for 9-10 minutes.

Crumbl cookie dough cookies
Ingredients
Make the edible cookie dough, check the notes if you don't want to make this.
- 2 tablespoon butter softened
- 1 & ½ tablespoon brown sugar
- 1 tablespoon granulated sugar
- ¼ teaspoon vanilla extract
- 1 tablespoon heavy whipping cream
- 1 pinch salt
- ⅓ cup flour cooked in the microwave for 90 seconds stirring after each 15-second interval. This makes it safe to eat.
- 1-2 tablespoon chocolate chips extra for decorating the cookies
Make the brown sugar cookie base
- 1 stick butter softened
- ⅔ cup brown sugar packed
- 1 large egg
- ½ teaspoon vanilla extract
- 1 & ½ cup flour
- 1 tablespoon corn starch
- ¾ teaspoon baking powder
- ¼ teaspoon salt
Make the cookie dough ice cream frosting
- 6 tablespoon butter softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoon vanilla ice cream melted but still cold
Instructions
Make the edible cookie dough
- In a small bowl, start by mixing the butter, brown sugar, and granulated sugar together. Add in the vanilla and the heavy whipping cream and mix again.
- Add in the cooked and cooled flour and a pinch of salt and mix well. Add in the chocolate chips, mix one last time.
- Using about ¼ teaspoon, scoop out the cookie dough, and roll it into small bite-sized balls. Place those cookie dough balls on a plate or a bowl and chill in the freezer while you make the cookies.
Make the brown sugar cookies
- Preheat the oven to 350F and line a large baking sheet with parchment paper then set aside.
- In a stand mixer bowl, using a paddle attachement, cream the brown sugar and butter together for about 3 minutes or until it is light and fluffy. Add in the egg and vanilla and mix one more time until incorporated. Add in the flour, corn starch, baking powder, and salt, and mix just until the flour disappears.
- Using a large cookie scooper, scoop out 7 evenly sized cookie dough balls, place them on the prepared baking sheet, and gently press down to about 1 inch in thickness. Bake for 14 minutes, then let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling wrack.
Make the ice cream frosting
- In a stand mixer or using a hand mixer, cream the butter until smooth using a whisk attachment.
- Add in the powdered sugar, vanilla, and vanilla ice cream and whip until smooth. I mixed my frosting for 7 minutes on medium speed. This will make it extra light and fluffy.
- Gently fold half of the edible cookie dough balls in the buttercream, then frost each cookie. Top with the rest of the cookie dough bites. Decorate with more chocolate chips and enjoy!

No worries at all! If you don’t want to make cookie dough from scratch, you can purchase edible chocolate chip cookie dough from your local grocery store. And such a show stopper, I’ll be doubling the recipe next time to share with friends.
