Thanksgiving leftovers turkey quesadillas are a cheesy, sweet, and savory quesadilla that uses up leftover thanksgiving items to bring you the most cheesy and delicious leftover meal!

What’s your favorite thing post-thanksgiving! I’m obsessed with black Friday shopping but also leftover thanksgiving food!

Today I wanted to show you an easy way to use up your leftover turkey meat from Thanksgiving as well as the cranberry sauce and sage you might just have laying around. I used a regular tortilla but you can use whole wheat or anything you have on hand. At this point, we are just trying to make this super easy because obviously yesterday’s cooking and baking were extremely exerting!

On the other hand, if you’re someone that doesn’t love turkey or just wants to enjoy this throughout the year without going through the hassle of making a whole turkey, you cal just use rotisserie chicken.

It’ll have the exact same comforting effect any time of the year!

Ingredients for this Turkey quesadillas with Thanksgiving leftovers

  • Tortillas– You need large tortillas, you can pick which ones you want for this recipe (whole wheat, regular, spinach)
  • Turkey meat- Here you will need to use leftover turkey meat to fill up your quesadillas. I have made these with rotisserie chicken and it tastes so good!
  • Cranberry sauce – You can use either homemade cranberry sauce or canned jellified cranberry sauce. The canned one will stay bright once you cook your quesadillas while the homemade won’t.
  • Sage leaves, thyme leaves or rosemary leaves– This recipe is amazing because you can use whichever herb you have or prefer!
  • Swiss and Mozzarella– These are the two cheeses I used to make this quesadilla but feel free to get creative!

How to make Thanksgiving leftover Turkey quesadilla

  • Heat up a large skillet over medium/medium-low heat then place a tortilla on the skillet, top the whole tortilla with a little bit of the swiss cheese and the mozzarella cheese, top one half with turkey, a few tablespoons of cranberry sauce, and your preferred herb.
  • Cait until the cheese is slightly melted before folding your tortilla and grill it on each side until golden brown.
  • Remove from the head and cup the tortilla into thirds or quarters and serve.

Can I use different cheeses for this recipe?

Absolutely! Some other cheeses that you can use would be cheddar, brie cheese, or even just play around with different cheeses that you like!

Do I have to shred my cheeses?

You can either shred your own cheeses or purchase them shredded already!

Another thing I’ve used is sliced or cubes leftover cheese from Tahnksgiivng since this is a repurposing Thanksgiving recipe, everything works.

Should I use dark or white meat?

This is a super simple recipe that uses whatever you have leftover or whatever you actually prefer. Dark meat is more flavorful and a lot more moist, while breast meat isn’t. I like to use a mix of both!

  • 4 medium tortillas

  • ⅔ cup mozzarella cheese shredded
  • ⅔ cup Swiss cheese shredded
