The holidays are definitely looking a little different this year with everything happening at the moment. That’s why I wanted to scale down a recipe that we usually make in a super large batch to share with everyone.

We might not be able to see our whole family in person for the holidays, but that doesn’t mean we can’t enjoy one of our favorite holiday sweet treat! Plus with the help of this article, everyone can go to Albertsons, shop for the same ingredients, and make this recipe through Zoom! Cool, huh!

I decided to go with a small batch keto peanut butter fudge to make sure that there is enough for a family of 2-4. This way you can celebrate the holidays without all the leftovers that might come with it. 

This is the best keto peanut butter fudge recipe ever!

This fudge recipe has also undergone multiple taste tests. Even the people that don’t love fudge as much loved this recipe because it has the perfect sweet and salty balance.

If you’re the type of person who doesn’t love fudge because it’s too sweet, well this recipe was made for you. So cheer up, you can enjoy fudge this holiday season!

This peanut butter fudge is the perfect Christmas dessert for many reasons, a few of those reasons are:

  • It stores amazingly which makes this fudge the perfect make ahead holiday dessert.

What is Truvia?

Truvia® Sweet Complete™ is sweetened with stevia with zero calories per serving and is used just like sugar! It is the once-and-for-all all-purpose sweetener!

How is this small batch peanut butter fudge keto?

This small-batch peanut butter fudge is a keto recipe because we are not adding any granulated sugar. We use Truvia® Sweet Complete™ to keep the carbohydrates low while still enjoying a sweet treat for the holiday season. The ingredients used in this recipe make this a very low carb and keto fat bomb almost. This will give you the necessary energy from the fat to keep you in ketosis.

I actually prefer this keto PB fudge to a regular fudge because this one has a lighter sweetness to it that doesn’t take away from the peanut butter flavor.

Ingredients to make this keto peanut butter fudge for the holidays

To make this peanut butter fudge recipe, here are the ingredients you will need:

  • Heavy cream- The heavy cream will be the base of this recipe.
  • Butter- You will need a small amount of butter to melt with the heavy cream.
  • Truvia® Sweet Complete™ All-Purpose Sweetener- This is what will sweeten your peanut butter fudge, while keeping it keto-friendly.
  • Smooth peanut butter- You will need a smooth peanut butter to add into your sugar free sweetened condensed milk when it’s ready. Make sure to use a store bought peanut butter with no added sugar in it to keep this fudge sugar-free.

Can I use homemade peanut butter to make peanut butter fudge?

This is a tricky question. Homemade peanut butter tends to have a lot more oil and be a little runnier than store bought. This might affect your end product by not allowing it to set properly.

You can try using homemade peanut butter fudge if it’s on the thicker side or just use store-bought peanut butter like me for a hassle-free holiday dessert. 

How to make low carb peanut fudge?

  • Keto sweetened condensed Truvia sugar
  1. Add the heavy cream, butter, and the Truvia® Sweet Complete™ to a medium saucepan. Place it over medium heat and bring to a boil.
  2. Once the mixture is boiling, reduce and bring to a simmer until reduced by half. Make sure to stir from time to time to prevent it from sticking to the pot. This process will take anywhere between 15-30 minutes, so just keep an eye out for it. The mixture will thicken and have a yellowish-orange color.
  3. Once the heavy cream mixture is ready, add in the peanut butter and stir until completely dissolved. Pour the mixture into a parchment-lined loaf pan. I used my 8.5×4.5 inch loaf pan. If you want your fudge to be thicker, use something smaller. Refrigerate or freeze until firm, then slice and serve.

How to store fudge?

Fudge needs to be stored in the fridge or freezer, always! If you leave it on the countertop, it will melt after a little while.

You can store it in an airtight container in the fridge for up to 7 days or in an airtight container in the freezer for up to 2 months.

Tips for the best keto peanut butter fudge

Here a few tips that will be handy whenever you are making your small batch low carb peanut butter fudge:

  • Watch your heavy cream and Truvia® Sweet Complete™ mixture carefully. You don’t want it to overcook and turn into caramel. We are aiming for a sweetened condensed milk texture.
  • Line your baking pan with parchment before you pour in your fudge. This will make pulling out the fudge much easier.
  • If you want a little more texture in your peanut butter fudge, you can either use crunchy peanut butter or just top your fudge with crushed peanuts.

Ingredients
  

  • 1 cup heavy cream 1
  • 1 tablespoon butter
  • 2 & ½ tablespoon Truvia® Sweet Complete™ All Purpose Sweetner
  • ¼cup +2 tablespoon smooth peanut butter

Instructions
 

  • Add the heavy cream , butter, and the Truvia® Sweet Complete™ All Purpose Sweetner to a medium sauce pan. Place it over medium heat and bring to a boil.
