  1. In a large bowl, mix the juicy blueberries with the sugar and lemon zest. Stir to combine.
  2. Spray your baking dish with nonstick cooking spray, and evenly distribute the blueberry mixture in the prepared pan.
  3. In a separate bowl, whisk the dry ingredients, aka the all-purpose flour, sugar, cornstarch, and salt until combined.
  4. Add in the milk and the melted butter and whisk until a batter forms.
  5. Drizzle the batter over the blueberries and bake in the preheated oven.
  6. You’ll know the cobbler is ready when the blueberry filling is bubbling on the side and the topping is golden brown.

  • 4 cup blueberries fresh or frozen
  • 1/3 cup granulated sugar
  • 2 tsp lemon zest
  • 5 tbsp butter salted or unsalted.

For the batter

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 tsp vanilla extract

Instructions 

  • Preheat the oven to 400F then slice the butter and place it in a 9×13 inch baking dish and place in the oven while the oven preheats to melt the butter.

  • In a large bowl, mix the blueberries with the sugar and lemon zest. Stir to combine.
