Their cookie base it a thick and chewy cookie studded with white chocolate to give it a little sweetness and a fun textural twist. Then they top their cookies with a smooth marshmallow creme cream cheese frosting for a delicious mouthfeel.

But I had to pick them out of a regular Lucky charms cereal box one by one and let me tell you, it took me a little while to get in the groove but as soon as I did we did it in no time!

  • Butterโ€“ yu can use either salted or unsalted, just make sure that itโ€™s at room temeprature.
  • Brown sugar-ย This will give these cookies an extra rich flavor.
  • Eggโ€“ Make sure to use an egg at room temp.

How to make Lucky charms cookies recipe

  1. Creamย the butter and sugar together.
  2. Mixย in the egg and vanilla butter emulsion.
  3. Addย in the dry ingredients and mix just until that disappears.
  4. Foldย in the white chocolate chips.
  5. Scoopย out the cookie dough with a large cookie scooper and drop on a prepared baking sheet. Gently flatten to about 1 inch in thickness.

Yes, you can!

Instead of making 8 larger cookies, you can make 16 smaller ones and bake them for 8-9 minutes instead!

Do I have to frost these cookies?

You technically don’t have to frost these cookies. They are just as good without the frosting because they have chocolate chips and Lucky Charms marshmallows in there.

I would definitely recommend having these with the frosting though so that all the flavors and textures are balanced. It helps adds extra sweetness to the cookie which is always nice!

Ingredients 
 

  • 1/2 cup butter salted or unsalted, softened
  • 1/2 cup brown sugar light
  • 1 egg at room temperature
  • 2 tsp butter vanilla emulsion or vanilla extract
  • 1/2 tsp baking soda
  • 1 & 1/3 cup flour
  • 1/4 tsp salt
  • 2/3 cup white chocolate chips
  • 1/2 cup Lucky charms marshmallows optional but highly recommended

Marshmallow creme frosting

Instructions 

  • Preheat the oven to 350F and line a baking sheet with parchement paper and set aside.
  • Cream the softened butter and brown sugar together until light and fluffy.
  • Mix in one egg and the vanilla butter emulsion.
  • Add in the flour, salt, and baking soda and mix to combine. Make sure to stop mixing as soon as the flour. mixture disappears to avoid overmixing. Fold in the white chocolate chips and the lucky charms cereal.
  • Using a large cookie scooper, scoop out 8 large cookie dough balls, place them on the prepared baking sheet, flatten them to about 1 inch in thickness, and bake for 11-12 minutes. Let the cookies cool down on the baking sheet for 20-30 minutes then transfer to a cooling rack.

Make the marshmallow cream frosting

  • Cream the butter, cream cheese, and marshmallow fluffy together until combined.
  • Add in the vanilla and the powdered sugar and whip until light and fluffy.
  • Frost each cooled cookie then top with some Lucky Charms marshmallows and enjoy!

    when my cookies came out of the hot oven they were fluffy. and once they cooled on the sheet they were flat not think and crusty any suggestions?

      Make sure you don’t flatten them too much before baking. Slightly flattening the top will ensure they retain that height when baked and cooled.
