I’m sorry I just had to yell that phrase out on the top of my lungs. I wanted to make sure you got it right off the bat. These are one of my favorite cookies ever. Especially around the holidays and Christmas time, but let’s be real.. I’ll take these anytime.

Here’s the thing, I like sugar cookies… Especially The Best Soft Sugar Cookies I shared a little while back. But nothing can beat these brown butter brown sugar gifts from heaven. NOTHING! They contain just a few ingredients, but with a couple tricks, and a couple ingredient swaps you find yourself enjoying an extremely luxurious cookie in no time.

Here is the thing about me… I love cookies, I truly do. I make my Small Batch Chocolate Chip Cookies at least once every week or two because my sister loved them.

I actually made them so much that I don’t touch them anymore. Not because I don’t like them but just because I’ve made them so much that I can go without. But when it comes to these brown sugar cookies, I can’t stop at just one, or two, or three…

Here are the ingredients needed to make this brown sugar cookie recipe:

  • Butter– The butter doesn’t need to be softened for this recipe because we will have to melt it to brown it anyways.
  • Brown sugar– This brown sugar cookie recipe is made with all brown sugar to give it that caramel flavor.
  • Egg– The egg is the binding element of this cookie. Make sure that your egg is at room temperature.
  • Vanilla extract The vanilla brightens the deep flavor of these brown butter cookies.

Brown sugar is white sugar with molasses!! Surprise, surprise! Natural brown sugar has molasses still left after the refining process, most of the commercially manufactured brown sugar usually is made by adding molasses to white sugar.

Brown sugar is pretty unique since it has molasses in it which gives it that dark amber color as well as that deep, rich, caramel or toffee flavor. That’s why chocolate chip cookies always taste so good!

How to make brown butter for cookies?

To make brown butter, you will need to melt the butter in a sauce pan over medium heat. Once it starts boiling and foaming, stir it continuously to be able to see the color of the butter. You will smell a nutty fragrance and notice the color changing to a deep golden yellow. That’s when you know it is ready!

When the brown butter is ready, immediately transfer it to a heatproof bowl and let it cool down completely in the fridge. If you leave it in the medium sauce pan to cool it might get burnt from the residual heat.

HOW DOES BROWN BUTTER TASTE LIKE?

Browned butte tastes very similar to toffee. It is a little sweet, a little savory and has a light aroma of caramel. So pretty much everything we absolutely adore. It tastes incredible because of the Maillard reaction where the heat breaks down animal protein into hundreds of flavor profile compounds.

How to make brown sugar cookies

  • Fist start by browning 4 tbsp ( or 1/2 a stick) of butter in a small sauce pan.
  • Now preheat the oven to 350F and line a large baking sheet with parchment paper then set aside.
  • bake 9 minutes.
  • In a stand mixer bowl, using a paddle attachement, cream the brown sugar and butter together for about 3 minutes or until it is light and fluffy. Add in the egg and vanilla and mix one more time until well incorporated. Add in the flour, corn starch, baking soda, baking powder, and salt and mix one last time. Just until the flour disappears!
  • Using a small cookie scooper, scoop out even cookie dough balls, roll them in the granulated sugar and place them on the prepared baking sheet. Bake for 9 minutes, then let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling wrack.
  • Enjoy these cookies right away or store them in an airtight container for later.

You will know when your cookies are done when the edges look set and start to turn brown, while the center still looks a bit undercooked. DOn’t worry it will continue baking as it comes out of the oven.

You can make this brown sugar cookie recipe in advance and freeze the cookie dough to have it ready for whenever the cravings hit

Make your cookie dough recipe as directed. Roll the cookie and freeze them on a silicone lined baking sheet. When they are fully frozen, transfer them to an airtight container, and back in the freezer. The cookies will last for up to 3 months this way.

When you are ready to bake them, thaw them in the fridge overnight and bake them for an extra minute or two.

I didn’t have to store these cookies when I made them because they tasted too good and ended up disappearing in less than 2 days.

If you can control yourself on the other hand you can store these in an airtight container at room temperature for 3 days. You can also store the baked brown butter cookies in an airtight container in the freezer for up to 3 months.

Whenever you are craving a cookie, you can pull one out, thaw it at room temperature or microwave it for 10-20 seconds and enjoy it with a tall glass of milk.

Tips for the best brown sugar cookies

These brown butter brown sugar cookies are seriously one for the books. To make sure that yours turn out as good as mine, here a few tips that you can follow:

  • Avoid over mixing the cookies dough- Make sure to stop. mixing the brown sugar cookie dough when the flour disappears. This will yield an extra soft cookie batch!
  • Use a cookie scoop so that all the cookies are the same size and bake evenly– You don’t want to have a cookie smaller than the other ones because that will mean it will over bake. Using a cookie scooper will ensure that all your cookies are the same size and all of them will bake at the same time.
  • Avoid over baking the brown sugar cookies– We want these cookies to be soft and chewy so make sure that you are not over baking them.
  • Let the cookies cool on the baking sheet– The cookies need to cool down on the hot baking sheet for about 10 minutes. This allows them to continue baking and to solidify

Ingredients
  

  • 1 stick butter divided
  • 3/4 cup brown sugar packed
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup + 2 tbsp flour
  • 1 tbsp corn starch
  • 1/4 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup granulated sugar to roll the cookies in

Instructions
 

Brown the butter

Once it starts boiling gently stir the melter butter with a wooden spoon or gently swirl the pan to continuously stir it. After a couple of minutes the butter will change color, going from light yellow to deep golden yellow similar to honey color. There will be bubbles at the top so continue stirring the melted butter to see the color change.Once small brown bits begin to form and a nutty smell comes from the butter, you will know that it is ready. The butter can burn very quickly once it starts smelling nutty so don't walk away from it.
  • Right away transfer the melted browned butter to a heatproof bowl and bring your butter temperature down to room temp.

  • Now preheat the oven to 350F and line a large baking sheet with parchment paper then set aside.
