Why Starbucks fans loved the s’mores bar

If you have been hunting for the Starbucks smore bar lately, you already know the sad news. Starbucks quietly pulled the s’mores bar from its pastry case, and the s’mores frappuccino had its own on-again, off-again run before disappearing too. For a while there, walking past the Starbucks counter in the summer meant grabbing one of those gooey marshmallow bars with your iced coffee, and then one day they were just gone.

I worked on the Las Vegas Strip making drinks back in my Bouchon days, so I have a soft spot for that coffee-shop-treat ritual. When I could not buy the bars anymore, I did the only reasonable thing and recreated them at home. The good news for you, this homemade version is cheaper, you can make a whole pan whenever the craving hits, and you control exactly how toasty those marshmallows get.

Why you need to make this recipe!

  • Tastes like the discontinued original: All the gooey marshmallow, milk chocolate, and graham cracker flavor of the Starbucks s’mores bar, recreated at home.
  • Cheaper than the coffee shop: These copycat Starbucks bars cost a fraction of the pastry case price. Making these gooey marshmallow s’mores at home is significantly cheaper than buying them at Starbucks, especially if you are a frequent customer.
  • No campfire needed: You get that toasted marshmallow s’mores flavor straight from your oven, any time of year.
  • Easy and fun: This is a simple recipe that comes together fast and is a fun activity to make with family and friends.
  • Customize your s’mores: Use your preferred chocolate, graham crackers, and marshmallows, and adjust the proportions to your liking.

Are Starbucks s’mores bars discontinued?

Yes, the Starbucks s’mores bar is discontinued. If you have searched “Starbucks s’mores bar discontinued” and landed here, you are in the right place. Starbucks rotates its menu constantly, and the s’mores bar got cut along the way, which is exactly why so many people search for a copycat recipe to make at home.

The s’mores frappuccino had a similar fate. It launched in 2015, briefly came back in 2019, and then disappeared again, though Starbucks has hinted at bringing the frappuccino version back. The bars, however, are not on the menu, so the only way to get that toasted marshmallow fix from the pastry case is to make it yourself. This copycat recipe is the next best thing, and honestly a little better since it is fresh out of your own oven.

How to make these delicious s’mores bars?

This is how you can make this easy sweet treat. Make sure to scroll down to the recipe card for the full detailed instructions!

  1. Add the crushed graham crackers, granulated sugar, salt, and melted butter together in a large bowl.
  2. Spread the graham cracker layer into the prepared 9×13 pan, then bake in the oven for 10 minutes.
  3. Top the graham cracker base with the Hershey’s chocolate bars and place in the warm oven for a few minutes just to allow it to melt.
  1. Using the back of a spoon or a spatula, spread the melty chocolate to even out that layer, then top with the marshmallows and place on the top oven rack with the broiler on high.
  2. Stay close to pull it out as soon as it gets a little toasty.
  3. Allow the bars to chill a little bit to set, then slice and enjoy!

Extra-gooey variation

Want them extra gooey? Some copycat versions drizzle a little sweetened condensed milk over the chocolate layer before adding the marshmallows. It makes the bars richer and helps them hold together when you slice. Totally optional, but a fun upgrade if you like a softer, fudgier bar.

Frequently asked questions – FAQ

Are Starbucks s’mores bars discontinued?

Yes, the smores bar Starbucks used to sell is discontinued from its pastry case. That is why this copycat recipe exists, so you can make the gooey marshmallow treat at home any time.

How do you store these easy s’mores bars?

You can store these bars in an airtight container at room temperature for up to 3 days. Freezing them unfortunately isn’t an option because of the marshmallow topping.

What type of chocolate is best to use in Starbucks s’mores bars?

In this recipe, I went with a Hershey’s bar to really keep that authentic classic s’mores flavor, but you can also use any other chocolate chips. I love using creamy milk chocolate chips for a delicious sweet treat.

Can I make these into Starbucks s’mores cookie bars?

Yes. People also search for the Starbucks smores cookie, and you can get that effect here. If you want a thicker, cookie-style base instead of a graham crust, press a cookie dough layer into the pan first, then add the chocolate and toasted marshmallow top the same way.

What can I enjoy with these seasonal treats?

A Starbucks s’mores frappuccino, iced coffee, vanilla ice cream on top of the warm bars, or hot chocolate with whipped cream.

I’ve never had the bars from Starbucks so I cannot say if they taste similar. But everyone at my potluck raved about these. Aside from the deliciousness of all her recipes, I especially love how she doesn’t waste ingredients. I’ve made SO many recipes on this blog and they always call for the exact amount in jars, cans, bags etc so there’s minimal waste.
