These Starbucks blueberry scones are moist, tender on the inside, and crunchy on the outside scones with just the right amount of bursting blueberries with every bite you take.

A few days ago, I tried the Starbucks scones and I wasn’t really surprised at how it tasted. I wish I can say it was moist, and bursting with flavors but it wasn’t. Maybe I had something that was a bit old from the Starbucks that I went to but I am not sure.

In my honest opinion, it was a downgrade from any scone you can make at home, but at the same time, I understand that convenience is also king.

That’s exactly why I decided to make this copycat recipe, to allow you to recreate your favorite Starbucks bakery item at home easily and have it taste even better than the real thing.

It is full of fresh blueberries, cream, and a crunchy topping for the perfect textural and flavor experience.

Ingredients for this Starbucks Blueberry Scone recipe

  • Egg- Make sure to use a large very cold egg, this is going to be our binding agent.
  • Heavy cream– The heavy cream has to be cold for this recipe.
  • Vanilla extract– The vanilla extract will give this a little extra depth of flavor.
  • Flour– AP flour works great for this recipe.
  • Imperial Sugar granulated sugar– This will give out scones a little extra sweetness.
  • Baking powder– This is the leavening agent that will give our scones some extra height.
  • Salt– Always use a little salt in your baked goods to keep them balanced in flavor.
  • Butter– Make sure to use very cold butter for this.
  • Blueberries– Fresh blueberries will work amazingly in this recipe.
  • Raw sugar– You can use the thick raw sugar as a topping for these homemade blueberry scones.

How to make Starbucks blueberry scones

This is how you can make blueberry scones. Make sure to scroll down to the recipe card for the full detailed instructions!

  1. Mix the egg, vanilla, and heavy cream together and set aside.
  2. Whisk the dry ingredients together.
  3. Mix in the cubed cold butter with your hands, a fork, or a pastry cutter.
  4. Pour the heavy cream mixture over the flour mixture and stir to combine. Don’t overmix.
  5. Mix in the blueberries.
  6. Pour the scone dough on lightly floured sugar, gently pat and shape into a thick 8-inch round circle.
  7. Slice the dough into 8 equally sized triangles.
  8. Place the scones on a parchment-lined baking sheet and chill in the freezer.
  9. Brush the heavy cream with extra cream and sprinkle with sugar.
  10. Bake the scones in the preheated oven, cool down, and enjoy.

How to store Starbucks blueberry scones

These blueberry scones are best when you make enjoy them the same day but if you need to store them, keep them in an air-tight container at room temperature for up to 3 days.

Once you’re ready to enjoy them either air fry them or pop them in the oven at 350 r for a few minutes and enjoy!

Can I freeze blueberry scones?

Absolutley! These scones freeze so well, plus they freeze can be frozen in two ways.

  •  Freeze before baking- Start by cutting them into 8 then freeze on a parchement lined baking sheet until solid. Transfer them into an air-tight container and store them in the freezer for up to 3 months. When ready to bake, bake them as suggested. You might need to add a minute or two in the oven to get them fully baked.
  • Freeze after baking- After the scones cool down, store them in an airtight container in the freezer for up to 2 months. Once you’re ready to enjoy them let them thaw in the fridge overnight or on the counter for a few hours.

How to make scones soft and flaky?

Soft and flaky scones are made possible when using ingredients at the right temperature. In this recipe, the ingredients need to be very cold, hence why we use very cold butter, cold cream, and a cold egg.

This technique will allow the butter to be layered in the dough creating crispy edges and a very soft interior. If your scones dough gets warm, just pop it in the fridge or freezer for a few minutes before baking.

How to make gluten-free Starbucks blueberry scones?

If you need to make this recipe gluten-free, you can use 1:1 GF Bob’s Red mill flour substitute or 1:1 GF King Arthur flour substitute.

Ingredients
 
 

  • 1 egg
  • ⅔ cup heavy cream Extra for brushing the scones
  • 1 teaspoon vanilla extract
  • 2 cup AP flour
  • ⅓ cup Imperial Sugar Granulated Sugar
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 tablespoon butter cubed,cold
  • 1 cup blueberries
  • Vanilla sugar for sprinkling

Instructions
 

  • Preheat the oven to 400F and line a baking sheet with parchment paper then set aside.
  • In a small bowl, mix the egg, vanilla, and heavy cream together and set aside.
  • In a large bowl, whisk the flour, granulated sugar, baking powder, and salt until combined. Mix in the cubed cold butter with your hands, a fork, or a pastry cutter.
  • Mix in the cubed cold butter with your hands (quickly to not melt the butter), a fork, or a pastry cutter. You want the mixture to look pebbly with little pieces of butter covered in flour.
  • Pour the heavy cream mixture over the flour mixture and stir with a fork or a rubber spatula to combine, stir in the blueberries. Don't overmix.
  • Pour the scone dough on a lightly floured sugar, gently pat and shape into a thick 8-inch round circle. Slice the dough into 8 equally sized triangles with a sharp knife.
  • Place the scones on a parchment-lined baking sheet and chill in the freezer for 15 minutes.
  • Brush the heavy cream with extra cream and sprinkle with granulated vanilla sugar or regular granulated sugar and bake for 18-20 minutes. Cool down and enjoy.

    I left out the blueberries and used the recipe to make strawberry shortcake. Delicious! BTW, instead of cutting in cold butter with forks I simply freeze the stick of butter and use the largest holes on a box grater to reduce the butter to the right size for blending with flour!

    10/10 exactly like Starbucks! my family was stoked. my husband said if all scones tasted like this he would like them more! would make again. *side note* I used frozen blueberries and had zero issues.

    I made it just like the recipe, but it was a little dry and I couldn’t keep it from cracking after forming it into a disk. It wouldnt let me cut perfect triangles. Next time I think I’ll use 6 tablespoons of butter than 5 to give it more moisture But I gave it 5 stars cause they were delicious. They baked up really nice. They were so flaky. I added 2 cups of blue berries. I drizzled some powdered sugar and creamer on them. They were amazing.

    I finally found a simple and easy recipe that is truly delicious. I made this last week and I was amazed at the results. It’s not dry like other recipes I have tried. The scones were buttery, soft and not cloyingly sweet. It was perfect with my morning coffee and afternoon snack. 5 stars all the way! Thank you!!

    I was craving scones but I’ve been tricked before by some bad recipes. I’ve tried her recipes before so I trusted that it was a solid recipe and I was able to tweak it into making it dairy free and vegan. (I actually forgot to add the egg but I had added flaxseed to the milk and that saved my scones) I sprinkled some brown sugar on top before baking and added a zingy lemon icing drizzle. The scones were tender and moist and the blueberries really make it amazing!
