Here are the key ingredients you will need to make this scotcheroo bar recipe. Make sure to scroll down to the recipe card for the full detailed ingredient measurements.
- Creamy peanut butter– This recipe uses creamy peanut butter, think Skippy of Jif instead of the natural peanut butter that separates.
- Light corn syrup- This will both sweeten and give our bars that super chewy texture.
- Granulated sugar- The granulated sugar will sweeten our bars.
- Krispy cereal – This will give our bars that great crunch.
- Butterscotch chips – This will give our bars that authentic schotcharoos flavor.
- Semi-sweet chocolate chips- Make sure to use good quality chocolate for the best-flavored treat.
- Oil– You can use any flavorless oil for this recipe. I have used vegetable oil, canola oil, or even coconut oil. The oil is what will make the topping extra smooth.

Frequently asked questions – FAQ
How to store scotcharoos bars?
You can store these bars in an airtight container at room temperature for up to 5 days.
How to you keep the scotcharoo bars from being too hard?
The secret here is to make sure that the sugar mixture doesn’t boil. If you allow the sugar mixture to boil it will harden as it cools hence the hard scotcharoos.
Can substitute butterscotch chips for peanut butter chips?
You sure can but they wouldn’t have the same flavor. They are called scotcharoos because of the butterscotch chips but if you’re not into that flavor peanut butter chips would be perfect for you!
Can I use brown puffed rice?
Absolutely! As long as you’re using puffed rice this recipe will turn out great.

I made 2 batches of these – one with semisweet chocolate and the other with milk chocolate. I used special k original instead of rice crispies. They turned out so good! My family and I loved these very much & I am glad to say my dad will be enjoying these on his big 50th birthday too 🙂
