The holiday season is right around the corner so I wanted to share something that would work really well for family gatherings, potlucks, or just to make as a family favorite to snack on around the holiday season.

This is the best scotcharoos recipe ever!

Granted I didn’t grow up in the US so I don’t have too many fond memories of myself enjoying these, I fell in love with them once I went to my husband’s house during the holidays.

From then on I started making them and gifting them around the holidays as well.

Scotcharoos are no-bake, chewy, peanut butter-coated puffed rice cereal bars topped with melted chocolate and butterscotch chips.

The best part is that they combine peanut butter, chocolate, and butterscotch flavor so effortlessly, making these bars very similar to butterfingers in taste.

  • Oil– You can use any flavorless oil for this recipe. I have used vegetable oil, canola oil, or even coconut oil. The oil is what will make the topping extra smooth.

  • Mix the light corn syrup, granulated sugar, and peanut butter in a large microwave-safe bowl. Melt in the microwave in 30-second increments, mixing in between every time.
  • Add in the rice Krispy cereal and stir until fully coated in the corn syrup mixture.
  • Spread the rice Krispie mixture in the prepared pan.
  • Melt the butterscotch chips and the chocolate chips, and the oil together in the microwave in 30-second increments, stirring in between.
  • Pour the melted chocolate mixture over the rice Krispie layer, spread it on top, then let it cool completely before slicing and enjoying.

Can substitute butterscotch chips for peanut butter chips?

You sure can but they wouldn’t have the same flavor. They are called scotcharoos because of the butterscotch chips but if you’re not into that flavor peanut butter chips would be perfect for you!

Can I use brown puffed rice?

Absolutely! As long as you’re using puffed rice this recipe will turn out great.

  • 6 cup rice Krispy cereal

Chocolate topping

  • 1 & 1/4 cup butterscotch chips
  • 1 & 1/4 cup semi sweet chocolate chips
  • 2 tsp vegetable oil

Instructions 

  • Line a 9×13 pan with parchment paper or aluminum foil, then set aside.
  • Mix the light corn syrup, granulated sugar, and peanut butter in a large microwave-safe bowl. Melt in the microwave in 30-second increments, mixing in between every time.
  • Add in the rice Krispy cereal and stir until fully coated in the peanut butter mixture.
  • Gently spread in the prepared 9×13 pan.
  • In a medium microwave-safe bowl, melt the butterscotch chips and the chocolate chips, and the oil together in the microwave in 30-second increments, stirring in between.
  • Pour the melted chocolate mixture over the rice Krispy layer, spread it on top, then let it cool completely before slicing and enjoying.

    I made 2 batches of these – one with semisweet chocolate and the other with milk chocolate. I used special k original instead of rice crispies. They turned out so good! My family and I loved these very much & I am glad to say my dad will be enjoying these on his big 50th birthday too ๐Ÿ™‚
