Let me tell you! I was over the moon this week once I found out that CURMBL brought back the chilled coconut lime cookies. I was so excited that on the same day I went to grab one for us, I also ended up developing this recipe.
So it’s pretty much fresh from the oven, or fresh from the fridge should I say since it’s a chilled cookie. Bonus: It’s amazing during the summer because it’s fruity and it’s also served cold. That’s what I call a win win in my books 🙂

Plus with the 4th of July being right around the corner I think these are the cookies you need to make to celebrate American’s independence.
The sugar cookie base of these cookies combines a fresh lime flavor with a tropical coconut flavor. Don’t worry, it’s not overpoweringly coconutty. It’s just enough to elevate the lime flavor without tasting too intense.
Adding the fresh lime juice as well as lime zest into the cookie takes it up a notch. Pair that with the tangy lime buttercream and you got yourself a winner!

Ingredients for this lime coconut sugar cookie recipe

- Butter & oil- The butter and oil combination is used to keep the cookies extremely moist. You will also need some softened butter to make the lime frosting.
- Granulated sugar & powdered sugar– This cookie uses both granulated sugar as well as powdered sugar to keep the final cookies as soft as can be! You will also need some more powdered sugar to make the lime frosting.
- Egg– The egg is the binding agent for these cookies. Make sure to use room temperature eggs.
- Lime juice & lime zest– This is the star of this cookie. The lime juice, as well as lime zest, are used in both the cookie base as well as the lime buttercream, and for toping the cookies.
- Coconut flavoring– The coconut flavoring is used in the cookie base to get these cookies as close to the real deal as possible.
- All purpose flour– To get a recipe as close to the one I am sharing here, try using a kitchen scale and weigh your flour.
- Salt – Always use a little salt to balance out the sweetness of the cookies.
- Baking powder– The baking powder will add some leavening to the cookies.
How to make CRUMBL coconut lime cookies?

- Cream the butter, granulated sugar, and powdered sugar.
- Mix in the egg, lime juice, lime zest, and coconut extract until smooth.
- Fold in the flour, baking powder, and salt until the dry mixture disappears.
- Bake the cookies then let them chill fully.
How to make the lime buttercream frosting
- Cream the butter, powdered sugar, lime juice, and lime zest together.
- Continue beating until light and fluffy before frosting your cookies.
- Top the cookies with a lime wedge and chill some more then serve.
What if my buttercream is too thin?
If the buttercream is a little too thin, place it in the fridge for 10 minutes and then mix again to get it fluffy. This should allow the butter to set and become thick again.
This often happens if the butter was too soft to start with or if your kitchen is really hot.

You can store these chilled lime coconut cookies in the fridge in an airtight container for up to 7 days.
Since they are supposed to be served chilled, no need to worry about pulling them out to get back to room temp before serving. Just grab out right out of the fridge and enjoy!
Can I freeze these lime sugar cookies?
You sure can! Since these cookies are meant to be chilled they also freeze really well.
Place the cookies (either frosted or unfrosted but without the lemon wedge) on a baking sheet in a single layer and freeze for 1 hour. Once they are fully frozen place them in an airtight container with either plastic wrap over the frosting or parchment paper over the frosting if you plan to stack them and freeze for up to 2 month.
You can also freeze the cookies and the frosting separately. I have done this plenty of times. Once you’re ready to serve, thaw both the cookies and the buter cream in the fridge overnight. You will need to whip the buttercream again before serving so it’s light and fluffy again.
Tips for the best chilled Crumbl coconut lime sugar cookies
- Make sure to use room temperature ingredients for this recipe– Room temperature ingredients are crucial for these cookies because that will affect how your cookies flatten out once you smash them!
- Don’t flatten your cookies too much- When you smash your cookies, you want them to be at about ⅓-1/2 inch flat, nothing less. This will keep them super soft and melt in your mouth in the center!
- Let your cookie cool fully before topping them with the frosting- Make sure that your cookies are fully cooled down before frosting or the frosting will melt and you will end up with a soupy mess and not so pretty cookies!

Fresh chilled CRUMBL lime coconut sugar cookies
Ingredients
- 1 stick butter softened
- ¼ cup oil
- ½ cup granulated sugar 100g
- 2 tablespoon powdered sugar
- 1 egg at room temperature
- 1 tablespoon lime juice
- 1 tablespoon lime zest
- ¾ teaspoon coconut flavoring
- 2 & ⅓ cup flour 228g
- ¼ teaspoon salt
- 1 teaspoon baking powder
Lime buttercream
- 6 tablespoon butter Softened 57g
- 1 cup powdered sugar
- 2 tablespoon lime juice Cold
- 1 teaspoon lime zest
- Lime wedges for decoration
Instructions
- Preheat the oven to 350F then line a baking sheet with parchement paper and set aside.
- Cream the butter, oil, sugar, and powdered sugar in a large mixing bowl or a stand mixer.
- Add the egg, lime juice,lime zest, and coconut extract to the sugar butter mixture and mix until combined.
- Add the flour, salt, and baking powder and mix until combined, using a large cookie scooper, scoop out 9 equally sized cookie balls and place on a parchement lined baking sheet .
- Spray the bottom of a glass or measuring cup with cooking spray, dip into a plate of granulated sugar, and gently press the cookie down. Make sure not to smash the cookies too thin.
- Bake for 8 minutes, cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool fully before frosting.
Make the tangy lime frosting
- In a large bowl or in a stand mixer bowl using a paddle attachement, cream the buter, powdered sugar, lime juice, and lime zest until light and fluffy.
- Generously spread the lime frosting on the chilled lime coconut cookie, top with a lime wedge, and serve!

These cookies turned out adorable, but unfortunately they weren’t my kind of cookie. If you love coconut and lime, perhaps give these a try! I will say though, the lime frosting is VERY strong, so if you’re not partial to lime, I suggest lowering the amount of zest and/or juice you add in. They’re soft and crumbly, and the lime frosting flavor combines with the coconut cookie when you let the sit in the fridge for a day. My family loved them though! They just weren’t for me 🙁
