This Ramadan my sister has been having all kinds of cravings, one of them being a single peanut butter cookie. Her reasoning was that she was going to be full from all the iftar (breaking the fast meal) so she only needed a single cookie to satisfy her.

To that I delivered! But I did make a cookie that was gigantic, we both snacked on it that evening. It was seriously the best thing ever!

I know that we’re not the only ones that enjoy small batch recipes, many others only bake for themselves or for themselves and a parent or a spouse so I truly hope you find this recipe helpful.

If I doubled the recipe could I just use one whole egg, or would I need to use two egg yolks?

    1. Chahinez says:

You can just use the whole egg if you double the recipe 🙂

Thank you! This is my new favorite pb cookie recipe!

I double it, using one whole egg, add a little extra pb and some chocolate chips. Get four big cookies, and they are AMAZING!

This is the best peanut butter cookie recipe I have ever used! I’m pretty new to baking, so this is actually the best cookie recipe I have ever used, period. The cookies (I split the dough into 2) came out perfect. I bookmarked this to make again another time!

I’m a baking novice so I haven’t tested out that many cookie recipes, but this is the best one I’ve ever used! Cookies (I split the dough into 2 smaller ones) came out perfectly. I bookmarked this to use it again in the future.

Very yummy! I rolled in sugar before baking and also used organic sugar free BP since that was all I had. Recipe is great.

This recipe is legit the best recipe I have found for a peanut butter cookie! I added chocolate chips to my cookies for a touch of chocolate-y deliciousness. I doubled the recipe and made 4 decent size cookies. I love that this recipe doesn’t make a ton of cookies. If I ever get a craving, I can whip one of these up in about 20 minutes from start to finish!

    1. Chahinez says:

Thank you so much Andi. This recipe is definitely great for when those cravings hit!

Delicious! Cookies turned out perfect, soft and chewy! I used crunchy unsweetened peanut butter and I added butterfinger bits. Will definitely make again!

The butterfinger bits were a great idea, I love that!
