Today is going to be a little different… but definitely in the best way possible! I have collaborated with my friend Ai to bring both her readers as well as mine somehting new and exciting!

I made a Healthy Mango Lime sorbet, something that is so good for you and will help beat this heat in no time! And in return I got this both beautiful and delicious Berry Chia Seed Parfait recipe! So without further ado, please welcome Ai 🙂

As the weather’s getting warmer, I’m finding myself craving fresh fruit. It’s nearing the end of strawberry season here in Japan, and I had to grab some before they disappear from the grocery stores! I knew I wanted to add it to my homemade granola for breakfast but decided to take it a step further.

I’ve recently been loving chia seed puddings as a snack because they’re nutrient dense and keep me full until my next meal. The idea of combining strawberries and chia pudding sounded delicious. And adding a nice crunch with the granola? It had me drooling instantly.

My berry chia seed parfait has layers of granola, berry purée, and vanilla chia pudding. Whether you’re looking for an impressive guilt-free dessert for Mother’s Day, or a special weekend breakfast to treat yourself after a long week, look no further!

What is chia seed pudding?

Chia puddings are one of the easiest things to make! It’s essentially a form of liquid mixed with chia seeds and set in the refrigerator overnight. The best part? It lasts for up to 5 days in the refrigerator! So it’s the perfect snack for busy people. Well, I mean, who’s not busy, right? Perfect for everyone!

Chia seeds are high in fiber, protein, omega-3 fatty acids, and minerals like calcium, phosphorus, magnesium, and manganese! A dessert that’s high in nutrients that tastes delicious? That’s not always easy to come by! It’s also very versatile so you can customize the flavor and toppings to your liking!

I used a combination of coconut milk and almond milk to soak my chia seeds. I personally like my chia pudding to be very thick so I used coconut milk from a can. Also, I can’t get enough of coconut! The extra fat keeps me satiated for longer, which I need running around with my toddler son! If you want to keep this chia seed parfait lighter, you could use all almond milk or any other milk of your choice!

Maple syrup, vanilla, and salt are also added to amp up the flavors! These are all essentially optional, but suggested for great flavor!

Tips on assembling a beautiful berry chia seed parfait

    1. Choose a wide glass tumbler or mason jar. First and foremost, you want to use glass so you can see the layers of granola, chia seed pudding, berry purée, and strawberries. You also want it wide enough so you can scoop in each layer without smearing the glass.
    1. Add a thin layer of chia pudding into the glass before layering the strawberries. The first time I made this berry chia seed parfait, I laid my sliced strawberries on top of the berry purée, and they started sliding down the sides of the glass! Have you ever begged pieces of fruit to wait and stop moving? They don’t listen. The chia seed pudding is thick enough to hold the strawberries so make sure you add a thin layer first, then lay the strawberries against the sides of the glass, and then add more chia pudding.
  1. Don’t spread the berry purée to the edge of the glass. The berry purée is simply frozen berries puréed using a blender or food processor. It can be quite runny, so when layered over granola, it can seep into the nooks and crannies, making your layer of granola completely disappear. You can either layer the berry purée over chia pudding, or you can leave a little space (about half an inch / a centimeter) like I did, so the chia pudding you layer on top pushes the berry purée to the edges but not too much.

So there you have it: a gorgeous dessert (or breakfast) sure to impress anyone you serve this to!

Conventional parfaits are quite a heavy dessert often loaded with sugar. Not something you want to indulge in if you’re trying to nourish your body. On the other hand, this berry chia parfait is filling but refreshing!

This berry chia seed parfait is not just impressive and guilt-free, it’s pack full of nutrients from the chia seeds and berries!

Ingredients

  • 2 cups non-dairy milk
  • ½ cup chia seeds
  • 1 to 2 tablespoons maple syrup or any other sweetener
  • ÂĽ to ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup granola
  • 1 cup frozen berries purĂ©ed in blender or food processor
  • ½ cup strawberries sliced (keep a few whole to garnish the parfait)

Instructions

  • In a bowl, add the non-dairy milk, chia seeds, maple syrup, salt, and vanilla extract. Stir together until there aren’t any chia seeds floating on the surface. Cover the bowl and place it in the refrigerator overnight.
  • In 4 glass jars, or 2 if you’re having this as a meal, add a layer of granola, followed by a layer of berry purĂ©e and then a thin layer of chia seed pudding. Carefully stick the sliced strawberries on the sides of the bowl, and fill with more chia seed pudding until the strawberries are covered.
  • Repeat the layers, and top with a sprinkle of granola and a whole strawberry. Serve immediately.

Notes

The granola will soak up the moisture from the berry purée and chia seed pudding, so do not let it sit for too long.
