Hello guys! Today I wanted to share this thought that I had after seeing how beautiful some of my pictures have been!

As I took the pictures for this recipe and started editing, I couldn’t help but smile at how gorgeous they were. The colors, the positioning, and the food were all to die for!!

So now, back to the quote of today… “Do it over and over again until it becomes part of who you are”

I wanted to remind and encourage everyone to not stop, to not give up until whatever you were wanting to master is part of you.. is part of who you are.  If I can do it, then you can do it too!

Delicious buffalo chicken meatballls

Again, I don’t mean to brag but come on… Just look at how amazing these beauties look. I can’t help but get extremely excited when my photos come out looking all professional like these ones. I really believe that it is because of all that contrast that I was able to create in this image, as well as the hard work put into making them. As I already said before keep on practicing whatever you have been striving to learn because progress comes with practice so never give up!

Anyways, today I have for you a healthy chicken recipe. This all came about the day I realized I should maybe cut down a bit on red meats because if you know me, you know I LOOVEEE ground beef. It is one of my weaknesses. I love burgers and many other North African dishes made out of ground beef. So because of how unhealthy it can be, I decided to try and experiment with ground chicken meat.

Since chicken breast tends to get old after a while, and I am all about easy eating (ground meat is easier for me to eat since I don’t have to chew too much haha)  I decided to embark on this journey of trying to make ground chicken meat taste bearable… and guess what I was able to make it taste AMAZING!

I went with a flavor that is very typical here in America, spicy buffalo sauce! This is one of those flavors I automatically got obsessed with after moving here. For some reason, I developed a love for it after visiting Chick-Fil-A and having their buffalo sauce with their mouthwatering waffle cut fries !!

So with some experimenting and a couple of failed batches, I ended up with these both delicious and healthy buffalo chicken meatballs. and guess what?!  I have been making them at least once a week now!!

On the plus side having these buffalo meatballs makes your life a lot easier when trying to eat better and meal prep to have things to eat on the go because you could prepare them Sunday and have them ready to go for the rest of the week!

Clean Eating Buffalo Chicken Meatballs

IF you have ever craved that delicious buffalo flavor but without all that greasiness and unhealthy additives, this recipe is for you. These amazing healthy buffalo chicken meatballs will be right up your alley. Whether it is for a special occasion or just for that Sunday meal prep!

Ingredients

  • 1 lb ground chicken meat
  • ¼ of a medium onion
  • ¼ tsp cumin
  • ¼ tsp cayenne pepper
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ cup of buffalo sauce divided into two ¼
  • ½ cup + 2 tbsp bread crumbs
  • 1 egg

Instructions

  • Start by preheating the oven to 400 degrees F, then mince the onion and sweat it in a pan that’s lightly greased. This should take about 10 minutes. Set it aside to cool down.

  • In a separate bowl, put the ground chicken meat with all the spices, the bread crumbs, ¼ of the buffalo sauce, the egg and the minced onion after it has cooled. Mix everything with a wooden spoon until everything is well incorporated.

  • After the meatballs have been cooked in the oven, place them in a separate pot over medium high heat and use the leftover ¼ cup of buffalo sauce to glaze them. Let them cook in the pan with the sauce until there isn’t any left in the pot and everything has been absorbed by the meatballs.

  • Place them in a glass container to save for later or enjoy them topped with some green onions and ranch dressing!

    1. After the meatballs have been cooked in the oven, place them in a separate pot over medium-high heat and use the leftover ¼ cup of buffalo sauce to glaze them.
