- Lavender Syrup: This is how we will add lavender flavor to the cold foam on this latte. You can buy the syrup from the grocery store or make one at home. You could also use the powder version if you’d like but you would have to add sweetener with it.
- Heavy Cream: combines with the lavender to create a delicious topping for your creamy matcha. It also creates a beautiful silky texture.
- Milk: Whole milk is used to dilute the heavy cream to create the perfect cold foam topping for a latte.
- Ice: Make sure to use ice made from purified water so that it doesn’t taste bad when it melts.
- Hot Water: will be used to mix with the matcha powder.

- To a tall glass, add the matcha powder and the hot water and mix until dissolved.
- Top that with the oat milk then some ice, making sure to leave enough room for your lavender cold foam.
- Add the milk, heavy cream, lavender syrup to a separate measuring cup and froth using a handheld frother until the mixture thickens. This can take 1-2 minutes. You can also add in a couple drops of purple food coloring if you want a more vibrant pop of color.

Finding the Lavender Syrup in stores can be difficult. Luckily, there are a couple of other ways you can make the lavender cold foam at home.
- Simple Syrup and Lavender Extract: One method is to do what I did and make a home made lavender syrup. All you need to do is make a simple syrup by combining equal parts (hot but not boiling) water and sugar, think 1 cup to 1 cup. Then add in some lavender extract and a little purple food coloring. Give it a stir and let it cool. Now you can use this in the recipe.
- Cream, Sweetener, and Lavender Powder: This method is more similar to the one Starbucks uses. They combine a vanilla-flavored sweet cream with their proprietary lavender powder. Your best option is to use heavy cream and milk with pumps of vanilla syrup and lavender powder. Combine all of this and froth it with a hand frother to create the cold foam for your lavender latte.

I actually made my own combining a lavender extract and homemade simple syrup, it’s super easy. Make simple syrup by cooking equal amounts of sugar and water on the stove. Once it boils, reduce to a simmer, add lavender extract and stir. Then let it cool.
