Peanut Butter Cookie Base
- Peanut Butter: Smooth and creamy peanut butter will be the flavor of the base of our cookie. Use processed over natural for better results.
- Butter: Butter gives a rich flavor and texture to the cookie. The better the quality, the better the flavor. If you’re someone who bakes or cooks regularly like I do, get yours in bulk from Costco or Sam’s Club. It’s very good quality and you save on price.
- Brown Sugar: Brown sugar is great because it adds a little moisture as well as sweetness to these cookies
- Granulated Sugar: White sugar is always a must as it gives pure sweetness without extra additives.
- Egg: A single egg is all you need to act as the glue that holds these cookies together.
- Vanilla Extract: Vanilla flavoring is in every cookie base as it enhances all the other flavors.
- All-Purpose Flour: Flour gives the cookies their structure as it absorbs the wet ingredients.
- Baking Powder and Baking Soda: These ingredients help the cookies rise to give them a much lighter and fluffier texture.
- Cornstarch: Cornstarch is great for balancing out heavy ingredients like peanut butter.
- Salt: As with all sweet desserts, salt is essential in balancing the sweetness.
Toppings
- White Chocolate Peanut Butter Cups: The key ingredient that gives these adorable, melted snowman cookies their white faces. White chocolate PB cups are perfect because they of course have the festive white color but also add an extra layer of peanut butter flavor!
- White Chocolate Chips: Melted white chocolate spreads over the peanut butter cup to cover the whole cookie.
- Candy Melts: Use green or black for the eyes, mouth, and buttons, and use orange for the nose. You can even use some red candy melts to create the scarf.

Prep and Bake the Cookies
- Preheat the oven, then line a large baking sheet with a piece of parchment paper and set aside.
- In a large bowl, mix the butter, peanut butter, brown sugar, and granulated sugar together with an electric mixer on high speed. Add in the eggs and vanilla extract then mix again until combined.
- Add in the flour, baking powder, baking soda, cornstarch, and salt, and mix just until the flour mixture disappears.
- Using a large cookie scooper, scoop out 9 equally sized cookie dough balls, place them on the cookie sheet, and gently flatten to about ¾ inch in thickness. Bake in the preheated oven for 9 minutes.
- Once they’re baked, take them out and let them cool down for 10 minutes while still on the baking sheet. Make sure you set a timer; you still want the cookies to be warm, not room temperature, when you start decorating.
Decorate the Cookies
- When the 10-minute timer is up, take your white chocolate peanut butter cups out of the wrapper and place one upside down on top of each cookie. Gently press it down into the cookie.
- Pour your white chocolate chips into a bowl and microwave it in 30-second increments while stirring in between until it’s melted.
- Scoop and pour 1-2 tablespoons of melted chocolate on top of the cookie. With oven mitts, carefully grab the sides of the baking sheet and gently tap it up and down on the counter. This will help the melted chocolate spread more evenly across the top.
- Finally, melt your colored candy melts in the microwave in 15-30-second increments. I like to do this in a piping bag or ziplock bag before I cut the tip-off. Massage the chocolate until fully melted then snip off the edge and create the eyes, smile, and buttons. Do the same with the orange candy melts and create the nose. Allow everything to set and enjoy!

What If I Don’t Have White Chocolate Peanut Butter Cups?
- Regular PB Cups: Since we are covering the peanut butter cup with melted white chocolate, you definitely could just use regular chocolate peanut butter cups. We used the white chocolate ones just to keep the flavor the same.

Made these for Christmas and they were a hit! I never thought PB & white chocolate would pair well together. I had to use thin PB cups instead of regular, but they still tasted really good. You can also use writing gel for baking if you don’t have dye or melting chocolate – which us what I did.
