What’s happiness, you ask? These easy no cocoa powder pretzel brownies will pretty much sum up my answer to that question to the T. These brownies are something that I like to make when I need a little boost or pick me up emotionally.

See, I am the type of person that doesn’t like to have just chocolate when she’s feeling down. I like to go the extra mile and make myself a batch of these no cocoa powder brownies with pretzels because I’m extra like that.

Trust me when I say that they immediately make me feel better. First off there’s that beautiful smell of brownies that takes over the house, then there’s that first ooey gooey brownie bite that I have to have right away, and lastly there’s that comfort of knowing that I have brownies in the fridge waiting for me whenever I want to have some more.

This is our family’s favorite pretzel no cocoa powder brownie recipe from scratch!

People often ask me, can you make brownies without cocoa powder and my immediate answer is – Yup, absolutely and I’m telling you they’re amazing. These no cocoa powder pretzel brownies are made using melted chocolate instead of adding cocoa powder to the brownie mix for an even more dense and fudgy chocolate brownie!

Seriously, these brownies have the texture of a flourless chocolate cake! They do have a little flower but just enough to hold them together without turning into cakey brownies. I love to have these warm with a scoop of vanilla ice cream too for an extra special dessert!

Ingredients needed for pretzel no cocoa powder brownies

To make this homemade pretzel brownie recipe, you will need the following ingredients:

  • Semi-sweet chocolate chips– This brownie recipe is awesome because it can be made using semi-sweet chocolate chips! The only thing here is that you need to make sure that you are using quality chocolate chips!
  • Butter- The butter will give these brownies a rich flavor and a dense texture! Perfect for all my fudgy brownie lovers.
  • Granulated sugar & brown sugar – We use two types of sugar in these brownies to keep them moist, dense, and fudgy.
  • Eggs- I use large eggs are room temperature.
  • Flour- All-purpose flour works great for these no cocoa powder brownies.
  • Salt– A little salt to balance out the sweetness.
  • Pretzels– The pretzels will add a salty element to these brownies as well as a nice crunch.
  • mini-semi sweet chocolate chips– I topped the brownies with mini chocolate chips as well to give it a sense of abundance. Plus who doesn’t love more chocolate!

How do you make brownies from scratch without cocoa powder?

These homemade pretzel brownies are extremely easy to make and only require one bowl, for an easy clean up. Here are the step by step instructions to make the best no cocoa powder brownies.

  1. First start by preheating the oven to 350F, then grease and line an 8×8 baking pan with parchment paper and set aside.
  2. Place the chocolate chips in a heatproof bowl and microwave it in 30-second increments, making sure to stir in between each time until the chocolate is completely melted. Add in the butter and both sugars and mix until completely combined.
  3. After that, add in the eggs one at a time and vigorously stirring between each addition. Add in the vanilla and stir again.
  4. Now time to add the flour, and the salt. Gently fold until the flour disappears then add in the ¾ cup crushed pretzels, fold one last time and pour the brownie batter into the prepared baking pan. Top it with the second ¾ cup crushed pretzels and the mini chocolate chips. Bake for 25 minutes, then let the brownies cool completely before digging in!

Tips to make the best pretzel brownies with no cocoa powder

When making brownies there are a few tips that if you follow, your brownies will turn out that much better.

  • Since we are using melted chocolate instead of cocoa powder to make these brownies you have to make sure that you are using quality chocolate. I often use Ghirardelli semi-sweet chocolate chips because they taste incredible.
  • When you add your eggs to the melted chocolate and sugar mixture, make sure that you beat the mixture vigorously between each addition. That’s what’s going to give you that impressive crackly brownie top!
  • Make sure to bake your brownies for only 25 minutes because that’s what it going to keep them moist, soft, and chewy.
  • Use parchment paper!! If you don’t like your baking pan with parchment paper, your brownies might stick to the pan. Sure you can still eat it but you won’t be able to have beautifully cut brownie squares.
  • Let your brownies chill so you can more easily cut into them. Sure if you want to just dig in with the spoon, by all means, go ahead. But if you want to be able to slice the brownies perfectly, let it cool down completely!
  • Use a serrated knife to cut the brownies and keep it intact. Any other knife might squeeze the topping down while you’re trying to cut and you will end up with a little bit of a mess.

How to store brownies without cocoa powder?

To store these brownies you have two options.

  1. Slice them into squares, place them in an airtight container and store them at room temperature. This is not my favorite way to store brownies because they will only last for 1-2 days this way.
  2. You can tightly wrap the brownies before cutting them with plastic wrap and store it that way at room temperature for up to 4 days. I prefer this method since it lasts longer.

Can you freeze no cocoa powder pretzel brownies?

You can absolutely freeze your brownies. You can store them in an airtight container and place them in the freezer. This method will keep your brownies fresh for up to 3 months. When you’r ready to eat the brownies just thaw them at room temperature or microwave the brownies for 10-15 seconds and enjoy!
