This chocolate-covered strawberry brownie recipe was honestly a last-minute idea, I wanted something easy but still impressive for Valentine’s Day. It has everything you love about chocolate-covered strawberries, but baked into a fudgy brownie you can slice cleanly and share.

I used a brownie mix here to keep things simple, but if you’re feeling extra, you can absolutely swap in my world’s best homemade brownie recipe instead. Both work beautifully.

And don’t feel locked into strawberries, raspberries or cherries are just as delicious on top and make a fun variation. This is one of those desserts that looks fancy, tastes incredible, and doesn’t require a ton of effort, my favorite kind.

  • Brownie mix – You can use whatever brand of brownie mix you really like. Make your brownies according to the package instructions in the back of the container. 
  • Oil – I used vegetable oil but you can use canola oil or any neutral oil for this recipe. 
  • Water
  • Eggs
  • Juicy strawberries
  • Good chocolate – Use chocolate chips or chopped chocolate bars. Semi-sweet or dark chocolate chips work best for a rich chocolate ganache.
  • Butter – You can use salted or unsalted butter in this recipe. 
  • Heavy whipping cream – The heavy cream is used to make the chocolate ganache that we are topping the brownies with. 

How to make the best chocolate covered strawberries.

  1. In a large bowl, stir the brownie mix with the remaining wet ingredients until the mixture is smooth.
  2. Pour the brownie batter into the prepared pan and bake in the oven according to the package instructions.
  3. Allow the brownies to cool down fully before adding an even layer of strawberry halves (cut side down) onto the brownie. 
  4. After adding the strawberries and chocolate ganache, transfer the brownies to the refrigerator to chill before slicing.

Easy chocolate ganache

  1. Heat the whipping cream and butter together in a large measuring cup in the microwave for 1-2 minutes. We want it steamy but not boiling. 
  2. Pour it over your chocolate chunks or chips and allow it to melt for about 4-5  minutes before whisking everything together. 
  3. Feel free to pop the chocolate ganache in the microwave for 15-second increments if it still isn’t fully melted. 
  4. Top the cooled brownies with the strawberries then the chocolate ganache.

  • Use a warm knife and wipe between slices for clean edges.
  • Cool brownies completely before adding strawberries so the layers stay clean.
  • Pat strawberries dry to prevent excess moisture in the brownies.

You definitely can use freeze-dried strawberries in this recipe but you can’t replace the fresh ones with freeze-dried fruits.  You can sprinkle the crushed-up freeze-dried strawberries on the ganache for a cuter look and an even stronger strawberry flavor if you’d like!

How can I get the perfect brownie slices every time?

My best trick is to use a very sharp knife. Keep it in a tall glass of hot water then clean it with a paper towel before slicing it into your brownies.
Make sure to dip your knife in the hot/warm water in between each slice then clean it well so that you make sure that your slices through that decadent chocolate ganache always come out clean and SHARP!

Ingredients 
 

For the Brownies:

  • 1 box of your favorite brownie mix plus required ingredients listed on the box, such as eggs, oil, and water

For the Chocolate Ganache:

  • 1 lbs Fresh strawberries washed and hulled

Instructions 

Make the brownies

  • Preheat the oven to 350F then line an 8×8 inch pan with parchment paper.
  • Prepare brownie mix according to package instructions.
  • Pour batter into the prepared baking pan and bake according to the package instructions. Use a toothpick to check for doneness. You want to insert the toothpick in the center of the brownie and have it come out with only a few crumbs.
  • Cool brownies completely in the pan on a wire rack

Make the chocolate ganache

  • Heat the whipping cream and butter together in a large measuring cup in the microwave for 1-2 minutes. We want it steamy but not boiling.   
  • Pour it over your chocolate chunks or chips and allow it to melt for about 4-5  minutes before whisking everything together.   
  • Feel free to pop the chocolate ganache in the microwave for 15-second increments if it still isn't fully melted.   
  • Top the cooled brownies with the strawberries then the chocolate ganache and allow the brownies to chill in the fridge for 2-3 hours before slicing into them with a sharp warmed up knife.
