I love cookies! If you can’t tell already by all the cookie recipes I have shared with you already… But I’m sure you knew that.
For a cookie lover like myself, having no brown sugar was not gonna stop me… especially when those pesky cravings were so strong! I mean seriously, what have you guys been doing during this quarantine besides baking and eating?!
I feel like I have gained so much weight, but hey it’s happy weight, right?!
Baking has helped me destress and stay calm during these uncertain time! I actually even put 20 of the best stress baking recipes together for you if you need something to do during this time.
I guess baking has been a blessing and a curse, I bake and destress. Then I freak out about using all the ingredients that I had so carefully purchased to last me a while. But don’t worry about that anymore! Now if you run out of brown sugar, you can still make incredible cookies without brown sugar.
These cookies that I made have the exact same texture and flavor of a regular traditional chocolate chip cookie without any brown sugar needed!

What’s so special about these cookies without brown sugar?
I feel like the title itself tells us what’s so special about this recipe!
I mean how many times have you been stuck at home wanting to make cookies but did not have any brown sugar? Maybe not that many times but right now especially, I feel like a lot of us might not have certain ingredients at home… whether it being because of quarantine or because people panic bought all the brown sugar..
This cookies recipe uses no brown sugar and makes a cookie that is very very similar to a traditional chocolate chip cookie that used brown sugar. It has crispy edges and a very soft and chewy center.. Just like I like my cookies 🙂
Ingredients to make chocolate chip cookies without brown sugar
- Butter – The butter needs to be softened.
- Sugar– Granulated white sugar is what we will be using in these no brown sugar cookie recipe
- Egg – You will need an egg at room temperature.
- Vanilla extract – Always use vanilla extract in your cookies, it makes them that much better.
- Flour– Regular all purpose flour will do the trick here.
- Baking soda– Baking soda will give these no brown sugar a nice lift.
- Salt – Again always use salt in your baked goods to add a depth of flavor.
- Mini chocolate chips – I used mini chocolate chips because I was using M&M’s as well. If you don’t want to use mini chocolate chips, feel free to use regular ones.
- Mini M&M’s – These are totally cute and will make your cookies a little more special.

How to make cookies without brown sugar ?
These cookies are made just like any regular chocolate chip cookie recipe minus the brown sugar. Continue reading for the full detailed recipe below.
- Start by whisking the flour, baking soda, salt and the chocolate chips then set aside.
- Then mix the butter and the sugar together in a large mixing bow until the color lightens and the texture becomes creamy. Add in the egg, then the vanilla and beat until incorporated
- Now add the dry mixture ⅓ at a time to the wet mixture, while stirring with a wooden spoon or spatula. Gently knead the dough on a lightly floured surface until firm.
- shape the dough into a log and wrap it in saran wrap, leave it in the fridge overnight or for at least 8 hours.
The next day or after the 8 hours
- Preheat the oven to 350° and line a baking sheet with parchment paper.
- Remove the cookie log from the fridge and slice the cookies dough into 20 pieces. Shape the dough into thick circles and place them on the parchment paper.
- Bake for approximately 20-25 minutes. The cooking time depends on your oven so make sure to check on the cookies every 10 minutes or so to avoid them burning.

Tips for the perfect chocolate chip cookies without brown sugar
- Don’t over bake the cookies– Just like any cookie recipe, these chocolate chip cookies with no brown sugar should not be over baked. They will continue baking as you pull them out of the oven. This technique will ensure that you get a soft and chewy center.
- Make sure to refrigerate your cookie dough before baking – If you don’t have enough time and can’t do the full 8 hours or overnight, try and aim for at least 2 hours in the fridge. This will allow the dough to harden and come together and develop a better flavor.

You can store these chocolate chip m&m’s cookie in an airtight container at room temperature for up to 7 days or in an airtight container in the freezer for up to 3 months.
