Hazelnut brownie cookies are my favorite thing ever! They are soft and chewy and packed with a whole lot of toasted hazelnuts. I like to compare these to a Nutella flavored cookie without any Nutella… Yup, that’s the beauty of adding toasted hazelnuts to chocolate cookies!

Death by chocolate and hazelnuts! This is what I like to call these brownie cookies. They are packed with gooey chocolate, toasted hazelnuts, and all of the best textures you can want in a cookie.

I’m gonna let you in on a little secret… I love cookies but I can usually control myself around them. Meaning I bake the cookies, I have one or two then give them to my sister and Kyle. Yup, I’m proud of the self control I have been able to achieve while running this food blog!

But for some reason, that self control was out of the window the second I made these. I don’t know if it was because it was that time of the month and I just had an abundance of amazingly delicious and fresh cookies right in front of my nose or what, but I couldn’t stop myself.

You need to make this world’s best halzelnut brownie cookie recipe!

I would grab one and go watch tv, then get up and grab another one because Netflix was out here asking me if I am still watching ( which means I had time to get up and grab more!)

I made sure to mindfully enjoy each bite because that what I like to do as part of my bettering my relationship with food. It’s been a tough journey but slowly, I can see some improvements.

Anyways, back to my new obsession! Hazelnut chocolate cookies or hazelnut brownie cookies, if a single ounce of you loves chocolate you need to make them asap because they are absolutely addicting!

I’m also going to be making these brownie cookies for Christmas and the holiday times as well. These chocolate hazelnut cookies would be the perfect Christmas cookie box filler. Seriously everyone will love you for these!

Besides the fact that they are a brownie inspired cookies, well:

  • These brownie cookies taste just like Nutella without having any Nutella in them!
  • They are fudgy in the center and nice and chewy on the outside. Can’t beat a good brownie cookie in my honest opinion ๐Ÿ™‚
  • Each cookie is packed with chocolate flavor as well as crunch form the hazelnuts.
  • Cookies in under 25 minutes?! Sign me up please. These brownie cookies are very quick to make and come out even better when made in a short period of time without any rest.
  • These brownie cookies have the perfect texture to be made into ice cream sandwiches! Chocolate cookies with ice cream in the center sounds like a dream to me.

Ingredients for brownie cookies

Here is what you will need to make these ooey gooey brownie cookies happen:

  • All purpose flour- All purpose flour will work great for these brownie cookies.
  • Cocoa powder I like to use dutch process cocoa powder for this recipe for a more intense chocolate color.
  • Baking powder– This will give a gentle lift to the brownie cookies and will keep them soft and chewy in the center.
  • Salt– I always add some salt to my baked good to even out the sweetness. If you use salted butter you can omit this ingredient.
  • Butter– Melted butter is part of the secret of this recipe. It makes the cookies super rich and dense at the same time.
  • Semi sweet chocolate chips Use good quality chocolate chips because after all, this is a chocolate cookie recipe!
  • Brown sugar– Brown sugar will give a nice molasses flavor as well as keep these brownie inspired cookies moist and chewy.
  • Granulated sugar– I add a little bit of granulated sugar to help the cookie have that perfect outside, while still keeping it moist and chewy inthe center.
  • Egg– You will need one egg at room temperature to hold everything together.
  • Vanilla extract Vanilla extract to make things even tastier, am I right or am I right?!
  • Hazelnuts And of course, you will need toasted hazelnuts!

How to make hazelnut brownie cookies

  1. First start by preheating the oven to 350F then living your baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl add in the flour, the cocoa powder, the baking powder, and the salt. Whisk to evenly distribute the cocoa powder and the baking powder into the flour then set aside.
  3. In a medium saucepan, melt the butter, once the butter is melted add in the chocolate chips and stir until fully melted. Set aside.
  4. In a stand mixer bowl add in the room temperature egg, the vanilla, the brown sugar, and the granulated sugar and whip until light and fluffy. This will take about 5 minutes. Add the chocolate mixture to the egg mixture and gently fold it in. Once that’s incorporated add in the dry ingredients, fold again just until the flour disappears. Add in the chopped toasted hazelnuts and give it one last fold.
  5. Using a small cookie scooper, scoop out 16 equally sized cookie dough balls, making sure to place them at least 1 inch apart from each other since they will spread. Place in the oven and bake for 10 minutes. Let the cookies cook for 5-10 minutes on the baking sheet then enjoy!

Tips for the best hazelnut chocolate cookies

  • Use room temperature ingredients- Using room temperature ingredients is crucial to get the perfect baked goods, especially when that’s what the recipe calls for. You will end having a more even bake.
  • Whip your egg and sugar mixture real good– Don’t skip this step! whipping your sugar and egg mixture well will give you somewhat of a crackly top and that brownie texture that you want from these cookies.
  • Let the melted chocolate mixture cool down a bit- Don’t rush into pouring your melted chocolate mixture into the eggs because you might end up having a chocolate scramble. Melt the chocolate and the butter, then move on to whipping your egg and sugar. That 5 minute window will allow the chocolate to cool down a bit.
