In a saucepan over medium heat, melt the butter, then lower the heat and add in brown sugar, corn syrup, egg, pinch of salt and vanilla extract. Stir until the mixture is smooth and begins to bubble. Add toasted pecans, stirring to coat.
½ cup brown sugar, ⅓ cup light corn syrup, 1 egg, 2 tablespoon butter, 2 teaspoon vanilla extract, pinch of salt
In a mixing bowl, beat the cream cheese, brown sugar, and vanilla extract until smooth and fluffy. Spread the mixture in the bottom of a serving dish or bowl. Place it in the fridge for later.
8 oz cream cheese, 3 tablespoon heavy cream, ⅓ cup brown sugar, ½ teaspoon vanilla extract, ¾ cup chopped pecans
Pour the cooled down pecan mixture over the cream cheese layer, spreading it evenly. Let the dip cool to room temperature, then serve with your preferred dippers.
Apple slices, graham crackers, or pretzels for dipping
Notes
• For extra flavor, consider a dash of cinnamon in the cream cheese mixture.
• Make ahead by preparing each layer separately and combining just before serving.
