This easy caramel apple cheesecake dip is a fluffy no-bake cheesecake layer topped with caramel and toasted pecans. Ready in 5 minutes for dipping apples!
Beat the softened cream cheese, heavy cream, vanilla extract, and brown sugar together until smooth, light, and fluffy, with no lumps.
8 oz cream cheese, 3 tbsp heavy cream, 1/2 tsp vanilla extract, 1/3 cup brown sugar
Spread the cream cheese mixture into a shallow serving dish or bowl. Keep it a little deep so there's plenty to dip into.
Spread the caramel sauce evenly over the cheesecake layer, then sprinkle the toasted pecans on top. Serve right away, or cover and chill until ready.
5.5 oz caramel sauce or caramel dip, 1/4 cup pecans
If the dip has been in the fridge, let it sit at room temperature for 20 to 30 minutes to soften, then serve with apple slices.

Notes
Don't serve it straight from the fridge. Cold cheesecake dip is too firm to scoop. Let it sit on the counter for 20 to 30 minutes so it's soft and creamy for dipping.Soften the cream cheese first. Cold cream cheese leaves lumps, so let it come to room temperature before mixing. The splash of heavy cream is what makes it light and fluffy like cheesecake, so don't skip it.Make ahead: Make it up to 1 day ahead and keep it covered in the fridge. Add the pecans or toffee right before serving so they stay crunchy.Storage: Cover leftovers tightly and keep them in the fridge for up to 3 days.Keep apples from browning: Brush the slices with lemon juice, or soak them in salted water for a few minutes and rinse before serving.
