Preheat the oven to 300F then line a few large baking sheets with parchment paper and set aside.
In a large bowl, cream the butter, graunualted sugar, and brown sugar until light and fluffy.
½ cup Butter, ¾ cup + 1 tablespoon granulated sugar, ¾ cup packed light brown sugar
Add in the eggs, vanilla extract, and lemon juice, and mix again until fully incorporated. Make sure to scrape down the bowl.
2 large eggs, 1 ¼ teaspoons vanilla, ¼ teaspoon freshly squeezed lemon juice
Add in the flour, oats, baking soda, salt, and cinnamon and mix again to combine. Do not overmix the cookie dough. Fold in the chocolate chips and walnuts.
2 ¼ cups all-purpose flour, ½ cup old fashioned rolled oats, 1 teaspoon baking soda, 1 teaspoon salt, pinch of ground cinnamon, 1 ¾ cups chopped walnuts, 2 ⅔ cups semi sweet chocolate chips
Using a 3-tablespoon cookie scooper, scoop out the cookie dough and place it on the prepared baking sheet. Bake in the preheated oven for 18-23 minutes or until the edges are slightly golden and the center is soft.
Allow the cookies to cool down on the baking sheet for an hour before enjoying them!
