This easy double chocolate banana bread is an easy and delicious way to use up those extra overripe banans.

Ingredients

  • 3 medium ripe bananas
  • ¼ cup oil
  • ¼ cup butter melted
  • ¾ cup brown sugar
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup greek yogurt
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup flour
  • ½ cup cocoa powder
  • 1 cup chocolate chips
  • cup mini chocolate chips for topping

Instructions

  • Preheat the oven to 350 degrees then spray a 9x5x3 loaf pan with non stick spray and set aside.
  • Add the oil butter, and sugar to a bowl and whisk until combined.

  • Add in the eggs, vanilla extract, mashed-up bananas, and greek yogurt and mix.

  • Stir in the flour, cocoa powder, baking soda, and salt, mix then add the chocolate chips. Don't overmix. Pour into the prepared baking pan and top with extra mini chocolate chips.

  • Bake in the preheated oven for 55-60 minutes, you'll know the banana bread is ready when you stick a wooden skewer in the center and it comes out clean. Let the banana bread cool down in the pan for about 10 minutes then transfer to a cooling rack to cool down fully before slicing into it.
