No, you’re not dreaming… This vegan chocolate mousse is the real deal and it’s extremely easy to make! It uses aquafaba to get it’s mousse like texture, making it dairy free, egg free, and of course vegan!

Hello evryone!

I hope you’re doing well, I am personally hanging in there. It’s been almost a month since we’ve been doing this social distancing thing. So I try to stay home as much as possible unless I need to go get more essentials.

I usually take a day or two to plan for it, that way whenever I leave the house, I can get everything done. I purchase everything I need and then plan on staying home for another 2-3 weeks.

With how everything is going on here in America, I highly doubt we will be done within 2-3 weeks though. So I am trying my hardest to stay positive and compassionate towards myself.

I definitely urge you to do the same, especially during these high stress, unknown times… and what better thing to take care of yourself than this vegan aquafaba chocolate mousse. It is fluffy and so so chocolatey! The best thing to make you feel better instantly.

What is so special about

This vegan chocolate mousse is one of my go to’s when I am either out of eggs, having a vegan friend over, or just want something tasty and delicious.

The best part about it is that it is impressive, you would’ve never guessed that it was made out of chickpea juice or aquafaba as everyone else calls it. The moment you start whipping up the aquafaba is the moment when everything changes, it becomes fluffy and as white as egg whites… just like magic!

What ingredients do I need to make this vegan chocolate mousse?

Below I have linked some of the products I like to make it easier on you!

  • Semi sweet vegan chocolate chips
  • Coconut oil
  • Instant coffee (optional if you don’t like coffee flavor)
  • Cocoa powder
  • Aquafaba

What is aquafaba?

Aquafaba is the water that the chickpeas have been cooked in. It is mainly composed of carbohydrates and proteins that have seeped through from the chickpeas during the cooking process. The carbohydrates and the proteins content in aquafaba is very low though.

I often like to use aquafaba in the place of egg whites fo make vegan desserts, such as meringues, pavlovas macarons and so much more.

Should I cook my own chickpeas, or can I use the aquafaba from canned chickpeas?

You can do whatever works best for you. If you have canned chickpeas, use that since it’s a lot easier. But if you don’t have that, you can cook your own chickpeas. You’ll also make sure that it’s just chickpea water and no other preservatives.

So short answer is do whatever works for you 🙂

How to make vegan chocolate mousse?

To make this aquafaba chocolate mousse:

1. Start by placing the chocolate, coconut oil, instant coffee and cocoa powder in a small bowl. Melt in the microwave in 30 second increments.

2 . As the chocolate is melting start whipping the aquafaba in a stand mixer or using a hand mixer. It will take about 10 minutes for the chickpea water to stiffen and develop stiff peaks.

3. Take a 4-5 large spoonfuls of the whipped aquafaba and fold in gently in the melted chocolate. This step will prevent the chocolate from seizing and stiffening up before getting incorporated into the rest of the whipped aquafaba.

4. Add the chocolate mixture to the whipped aquafaba and gently fold using a spatula. Fill 3 dessert ramequins with the vegan chocolate mousse and chill for a couple hours or overnight.

5. Serve with grated chocolate on top and raspberries like I did, or make it fancier with some coconut whipped cream!

How to store aquafaba chocolate mousse?

When you place your aquafaba chocolate mousse in little ramequins cover it with plastic wrap if you’re not going to eat it on the same day and place it in the fridge. It will last 1-2 days after it was made.

I’ve never had it last that long though because it is absolutely delicious!
