This Starbucks brown sugar syrup recipe is a delicious simple syrup recipe that is used to make your favorite Starbucks drinks. Think Starbucks iced brown sugar oatmilk shaken espresso, or even some of their holiday drinks! The best part about this recipe is that it provides unique flavors by using simple ingredients like light brown sugar, vanilla extract, and water!

It has caramelly notes from the brown sugar that will elevate both iced coffee as well as hot coffee. Plus if you know me you know that there is no limit to where I will put my brown sugar syrup! Try it with tea or even bubble tea for a delicious cold drink!

What is Brown Sugar Simple Syrup?

Brown sugar simple syrup is a syrup that became popular a few years ago thanks to Starbucks launching their iced brown sugar shaken espresso around the holidays. 

It is pretty much a simple syrup that uses brown sugar instead of white sugar. Perfect with hot or cold beverages any time of the year! 

The ingredients in the Starbucks version of this flavorful syrup list brown sugar, water, salt, natural flavors, and preservatives. (which is a big reason why I love making my own at home because I can really control what I put in there)

What Do I Need to Make Starbucks Brown Sugar Syrup Copycat Recipe

  • Brown sugar – We are using light brown sugar in this recipe. 
  • Salt– Always use a little salt in your sweets to balance out the flavors. 
  • Vanilla extract- To add extra depth of flavor in our syrup!
  • Cinnamon stick (optional)– This will add a nice hint of spice to our simple syrup. The ingredient list doesn’t mention cinnamon on the bottle of Starbucks brown sugar syrup but you can definitely taste it so we’re going with it in this recipe. 
  • Water– Make sure to use filtered water for a better-tasting syrup.

Can I Use Ground Cinnamon If I Don’t Have a Cinnamon Stick?

 Sure! I actually like using cinnamon sticks because it is perfect to infuse our syrup with those spices without adding any graininess to the mixture. 

To use ground cinnamon I would recommend adding about ½ teaspoon to the brown sugar, salt, and water mixture before you start heating it up. It will make your syrup darker in color and will make it taste absolutely out of this world!

How to Make a Delicious Brown Sugar Syrup

This is how you can make this copycat version of the Starbucks syrup. Make sure to scroll down to the recipe card for the full detailed instructions! 

  1. Place all of the ingredients into a saucepan over medium-high heat. 
  2. Stir continuously until the mixture starts to boil and the sugar dissolves. 
  3. Reduce the heat then allow the syrup to sit at that gentle simmer for 1-2 minutes.
  4. Remove from the heat, mix in the vanilla extract, and allow it to cool down a little before removing the cinnamon stick(if using) and transferring the syrup into a mason jar.
  5. Use in your coffee, tea, or even cocktails!

Do I Need to Use Cinnamon in this Recipe?

Absolutely not. You can make this brown sugar syrup without the use of cinnamon if you don’t want that spice in your final product.

  • Any and all espresso drinks
  • Cold brew coffee
  • Hot chocolate beverages to add depth and sweetness to them. 
  • Milk tea
  • iced tea
  • Cocktails, think an espresso martini aka the coffee lover drink of choice.

Does Starbucks Sell its Brown Sugar Syrup?

This mostly depends on the location. I have done my research, and you can buy their syrup online on Etsy, Amazon, and even on eBay. It’s the same syrup that the Starbucks chain uses but it can be pretty pricy.

That’s why I would recommend trying to remake it at home. You can save up money and know exactly what is in your drink.

    Does it need to be refrigerated after it’s been made?

      It doesn’t have to, but it will help it stay fresh for longer. But storing it at room temperature is fine too.
